We love this delicious, easy frozen vegetable soup 🍲 made with frozen veggies (no tomatoes! I'm Irish and prefer our tomato-free veggie soups!). Just chuck everything in a pot, simmer for 20 minutes, and blend. Done! 🥳

Delicious creamy spicy chipotle lime sauce 😍. Thick enough to dollop onto tacos, dip tortilla chips in, or thin with a little water to drizzle over burrito bowls. Recipe ⬇

4 tablespoons oil
6 tablespoons sour cream
2 ½ tablespoons lime juice
1 ½ tablespoons honey
Small handful of cilantro
3-4 chipotle peppers (the type stored in adobo sauce)
½ teaspoon salt

Blend or process until smooth, and enjoy!
