Wanted to try something that came to me when I was trying to sleep but thinking of the usual tomorrow's cookings. It is a pork ternderloin butterflied open and smeared with cream cheese, cloudberry jam, white pepper, salt, red chili flakes and chives, rolled into a roll and brushed with EVO and balsamic syrup and salt and pepper on top. Cooked 45 minutes in an oven tray at 160C with a bit of white wine. Pulled out to rest. Sauce made with the white wine/meat juice mixture strained. Added maybe 4-5 tablspoon of heavy cream and the remaining cream cheese, chives, finely diced shalots and a bit of honey, mustard, white pepper. Potatos parboiled, tossed in EVO and sea salt, finished in air fryer (195C, 16 minutes). Sauce on bottom. Two slices from the roll, dopple of cloudberry jam and garnish with red chili flakes, balsamic syrup and chives. Oh yes the combination worked like magic. Not that pretty but magical flavor combination 🥰
