Fresh, vibrant, and full of flavour 🌊🐟

Our Salmon Poke Bowl is the perfect choice for a light lunch or easy dinner. Featuring tender salmon, fluffy rice, creamy avocado, and a drizzle of your favourite sauces, it’s a simple way to enjoy something both nourishing and delicious 🥑🍚

Ingredients

- 2x 4–5 oz (113–140g) skin-off salmon portions from Bakkafrost
- 1 garlic clove
- Thumb-size piece of ginger
- 4 tbsp (60ml) soy sauce (gluten-free optional)
- 2 tbsp (30 ml) olive oil
- ½ tbsp (7.5 ml) sesame oil
- Fresh oba leaves
- 2 cups (approx. 400g uncooked) rice
- 1 avocado
- Spicy mayo, eel sauce, sriracha
- Sesame seeds

Instructions
Step 1 – Slice the garlic and ginger, then mix with soy sauce, olive oil, and sesame oil.

Step 2 – Season the salmon with salt and pepper on both sides.

Step 3 – Coat the salmon in the marinade, ensuring all sides are covered, and leave for 5 minutes.

Step 4 – Air fry at 180°C / 350°F for 10 minutes while cooking your rice.

Step 5 – Once cooked, flake the salmon into bite-sized pieces.

Step 6 – Combine the rice, oba leaves, and salmon. Top with sliced avocado, sauces, and a sprinkle of sesame seeds.

Light, fluffy blinis topped with Salmon from Bakkafrost, soured cream, fresh dill and pomegranate seeds. A simple yet elegant canapé, perfect for spring celebrations, gatherings 🐟 🍽️

INGREDIENTS

Topping
- 100g / 3.5oz smoked Salmon from Bakkafrost
- 70ml / 1/3 cup soured cream
- Small bunch fresh dill
- 1 lemon
- Handful pomegranate seeds
- Freshly ground black pepper

Blinis
- 10g / 2 tsp fresh yeast
- 250ml / 1 cup warm milk
- 150g / 1¼ cups buckwheat flour
- 2 eggs, separated
- Pinch of salt
- Oil, for cooking

INSTRUCTIONS

Step 1
Dissolve the yeast in half of the warm milk (125 ml / 1/2 cup). Place the flour in a bowl and make a well in the centre. Whisk in the yeast mixture and leave to stand in a warm place for 45 minutes.

Step 2
Warm the remaining milk (125 ml / 1/2 cup) slightly and whisk in the egg yolks. Add to the batter and mix well. Leave to rest for another 45 minutes.

Step 3
Beat the egg whites until stiff peaks form. Gently fold into the batter. Heat a lightly oiled frying pan over low to medium heat. Add small spoonfuls of batter and cook for 1–2 minutes on each side until golden. Set aside to cool.

Step 4
Top each blini with soured cream, a slice of Salmon from Bakkafrost, and a grind of black pepper. Finish with pomegranate seeds and a sprig of dill.

We were honoured to welcome Her Royal Highness The Princess Royal to officially open our Applecross RAS — the UK’s largest recirculating aquaculture system and a major step forward in sustainable Scottish salmon production.

During her visit, The Princess Royal met our teams and learned how advanced technology is helping improve fish welfare, reduce environmental impact and support high-skilled rural jobs.

At the heart of the development is our ‘one summer at sea’ approach — allowing salmon to grow longer in controlled freshwater conditions before transfer to sea. This has the potential to significantly improve survival, reduce biological challenges, and make better use of natural resources.

Applecross supports around 40 skilled roles and represents a significant long-term investment in innovation, renewable energy and regional supply chains.

We are proud to showcase the people, partnerships and technology behind this facility — and the role it plays in shaping the future of Scottish salmon farming.

The journey continues from fjord to harvest 🚢🐟

Our Farming Service Vessels (FSV) support daily operations across our farming sites, with 9 vessels (8 in the Faroe Islands, 1 in Scotland) ensuring efficient transport, lice treatment, net cleaning, and overall fish welfare.

From there, the journey continues to Harvest.

We operate 3 harvesting facilities, 2 in the Faroe Islands and 1 in Scotland keeping operations close to source and quality at its highest.

In 2025, we produced 106,823 tonnes of salmon (gutted weight), an 18% increase from 2024.

Our product range reflects both quality and versatility:
• 79% sold fresh (whole salmon and fillets)
• 21% further processed into portions, frozen, and smoked products

A fragrant and lightly spiced salmon dish featuring pan-seared Salmon from Bakkafrost, citrus glaze, crunchy pistachios, and herbed couscous. Balanced, fresh, and full of texture.

INGREDIENTS

- 4 portions of salmon from Bakkafrost (about 5–6 oz / 140–170 g each)
- 1 tbsp / 15ml curry powder
- Salt, to taste
- 2 tbsp / 30ml oil from pickled peppers in oil
- 1 cup / 180g couscous
- 1 cup / 150g snap peas, sliced
- ¼ cup / 35g pistachios (or other nuts), roughly chopped
- ½ cup / 70g pickled peppers in oil, chopped
- 1 orange (zest and juice)
- 1 tbsp / 15ml honey
- Yogurt, for serving
- Fresh mint, for garnish

INSTRUCTIONS

Step 1: Cook the salmon
Season both sides of the salmon fillets with curry powder and salt. Heat a large pan over medium-high heat and add the pickled pepper oil. Cook the salmon for about 5 minutes per side, until golden and cooked through.

Step 2: Prepare couscous
Prepare couscous according to package instructions. Set aside.

Step 3: Prepare ingredients
Zest the orange and cut it in half. Roughly chop the pistachios and pickled peppers.

Step 4: Make the glaze
Squeeze the orange juice over the salmon in the pan. Add the zest and honey. Tilt the pan and baste the salmon with the sauce until slightly thickened, then remove from heat.

Step 5: Prepare couscous mix
Transfer couscous to a bowl. Add pistachios, pickled peppers, and snap peas. Season with salt and mix well.

Step 6: Serve
Spoon couscous onto plates. Top with salmon and gently break it apart if desired. Spoon over the citrus glaze. Add yogurt or fresh mint if using.
