Baingan Ka Bharta Recipe:
Ingredients:
- 2 large eggplants (baingan)
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 2-3 cloves garlic, minced
- 1-inch ginger, minced
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
1. Wash the eggplants and pat them dry. Apply a little oil all over the eggplants.
2. Roast the eggplants over an open flame or in a preheated oven until the skin is charred and the flesh becomes soft. Keep turning them occasionally for even roasting.
3. Once roasted, remove the eggplants from the flame or oven and let them cool.
4. Peel off the charred skin from the eggplants and mash the flesh using a fork or potato masher. Set aside.
5. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
6. Add minced garlic and ginger, sauté for a minute until fragrant.
7. Add finely chopped onions and green chilies, sauté until onions turn translucent.
8. Add turmeric powder, red chili powder, and coriander powder. Mix well and sauté for another minute.
9. Add finely chopped tomatoes and cook until they turn soft and mushy.
10. Add the mashed eggplant to the pan and mix well with the masala.
11. Cook for 5-7 minutes, stirring occasionally, until the flavors are well combined.
12. Season with salt to taste and cook for another 2-3 minutes.
13. Garnish with freshly chopped coriander leaves.
14. Serve hot with roti, naan, or rice.
