There are wines you think you know… until one quietly changes your mind.

At , this Gigondas from — Clos Derrière Vieille — did exactly that.
Far from the rustic power I often associate with the appellation, this one unfolded with precision, finesse, and an unexpected lightness.
Silky, composed, incredibly digestible… the kind of wine that brings calm rather than weight.
A real pleasure to discover.

The food followed the same philosophy.
Rustic at heart, but never heavy — everything felt deliberate, precise, and deeply satisfying.

Langoustines, barely touched, letting their natural sweetness speak.
A beautifully glazed stuffed cabbage, rich yet perfectly balanced.
A simple chocolate mousse to finish, comforting without excess.

Nothing was trying too hard. And that’s exactly why it worked.

It started simply… nothing that tried too hard.

And then the 1988 Mission Haut-Brion was poured.

There’s always that first moment — you don’t really say anything, you just look at it, then taste… and something shifts.

Not because it’s old, or rare, or anything you could explain easily.

It just felt alive.

Like it had kept something from its time — something intact, almost untouched. Not frozen… just waiting.

1988 didn’t feel far away.
It felt like it was right there, at the table.

The kind of wine that makes everything else slow down without asking for it.

Oysters came first, clean, precise — almost like a reset.

Then a daube de bœuf… warm, deep, comforting in the most honest way. The kind of dish you don’t analyze, you just stay with it.

And a dessert that brought everything back to something simple, almost familiar.

But by then, the tone had already been set.

A quiet thank you to for that bottle — some choices stay with you longer than others.

Some bottles stay in your memory.

Others… feel like they were already part of it.

Some dinners simply feed you. Others stay with you.

This was unmistakably one of the latter.

At , everything begins in a soft, intimate atmosphere where nothing feels forced. The kind of place that lets the experience unfold naturally.

The cuisine is honest, precise, and quietly confident. No unnecessary complexity — just perfectly judged textures, clean flavors, and a sense of generosity kept under control. You feel the touch of in every plate: a cuisine that doesn’t try to impress, but inevitably does.

But that night, the wines told an even deeper story.

A Les Chétillons 2014 from Pierre Péters opened the evening with striking purity. Razor-sharp tension, vibrant energy — the kind of Champagne that immediately sets the tone.

Then a journey to Sicily with Feudo Pignatone 2020 by .falsini . Airy, mineral, almost saline — carrying that distinctive volcanic freshness that lingers beautifully.

And then… a shift in dimension.

A Richebourg Grand Cru 2017 from . Deep, structured, incredibly precise. Not a wine that seeks to charm instantly, but one that reveals itself slowly, with quiet authority.

Finally, a Brunello di Montalcino from . A signature finish. Warm, layered, endlessly long — the kind of wine that stays with you well beyond the last sip.

Throwback to when and came to Marrakech.

We didn’t overthink it — just went to for dinner.
Italian, simple idea… but everything landed exactly right.

A proper Milanese, crispy, generous, no nonsense.
Ravioli that felt like comfort more than technique.
Octopus with that slight edge that makes you go back for another bite.

And a bottle of 2019 that slowly disappeared while we were talking about everything and nothing.

No performance, no pressure.
Just a table, good food, and the kind of evening you don’t plan… but remember.

This one does.

At , there’s no noise, no tricks — just precision, generosity, and that rare feeling that someone actually cares about what you’re about to eat.

It starts clean.
Oysters. Sharp, alive.
Then foie gras — simple, unapologetic, exactly what it should be.

A glass of Grand Reserve Chardonnay sets the tone.
Fine bubbles, tension, energy. Not here to impress — here to keep you awake.

And then… it builds.

Warm plates, silky textures, dishes that don’t try to be smart — just right.
Everything flows. Nothing misses.

Until the meat hits the table.
Perfect cuisson. No discussion.

The Pinot Noir “Aimer, rêver, prier, se taire…” by follows with elegance — light, precise, slightly wild. The kind of wine that doesn’t dominate, but elevates everything around it.

First lunch of the “Club des Seigneurs”.

What started as a simple idea turned into a truly memorable moment around the table.

For this first gathering, we enjoyed a beautifully tailored menu paired with an exceptional lineup of wines — exactly what this club is meant to be about: sharing great bottles, great food, and great company.

We began with the whites, opening a Meursault 2021 from Domaine des Comtes Lafon ( .dom ), generous and precise, setting the tone for the lunch.

The menu unfolded with refined dishes that perfectly matched the wines — artichoke with parmesan and herbs, vibrant green beans with toasted almonds, and beautifully glazed seasonal vegetables.

Then the reds took the stage.

The Clos Florentin 2020 from Domaine Jean-Louis Chave showed beautiful depth and freshness, followed by the powerful Bonnes Mares Grand Cru 2020 from Domaine de la Vougeraie ( ), a Burgundy of great structure and elegance.

And then came a truly special moment with the legendary Château Latour 1989 ( ), an extraordinary Pauillac showing remarkable complexity and a finish that seemed to last forever.

The centerpiece of the meal was a magnificent slow-roasted veal shank, meltingly tender and perfectly suited to these great reds.

To conclude, we enjoyed the iconic Vin de Constance 2021 ( ), bringing the lunch to a refined and elegant finish.

Beyond the wines and the food, this first lunch of the Club des Seigneurs was above all a beautiful moment of sharing — conversations, laughter, and the pleasure of discovering exceptional bottles together.

There are projects that start as an idea.
Others start as a feeling.
beitalnoor.marrakech began with a simple desire:
to bring light back to a forgotten place.

When Joëlle and I first walked through the old riad, it was silent, almost abandoned. But behind the dust and the cracks, we could see something else — a home waiting to breathe again.

Months of restoration followed.
Hundreds of hands.
Artisans, patience, and an obsession for detail.

Today, seeing Palais Beit Al Noor featured in Hôtel & Lodge is not just a recognition of a hotel. It is a tribute to craftsmanship, to Marrakech, and to the beauty that can emerge when cultures meet.

At a time when Lebanon, the country of our hearts, is going through such difficult days, this project also carries a more personal meaning for us.
A quiet homage to a land we see suffering — and that makes us suffer with it.

We hope that the light we have tried to bring to life in Marrakech may also stand, in its own way, as a small symbol of hope for Lebanon.

One of those evenings where the table keeps filling faster than you expect.

Prosciutto carved at the table, delicate antipasti, carpaccio dressed with bright citrus, and that classic vitello tonnato done exactly right.

Then the wines start shaping the night.

A Vosne-Romanée 2020 from Domaine d’Eugénie — silky, elegant, pure Burgundy energy — perfect with the lighter dishes.

The pace changes when the pasta arrives.

Orecchiette, rich agnolotti, and finally a fiery arrabbiata.

That’s when a Vino Nobile di Montepulciano Riserva from Boscarelli takes over — deeper, structured, and exactly what the richer plates needed.

Food, wine, and that unmistakable Mamounia atmosphere.

The kind of dinner you wish you could rewind and start again.

Some places stay with you long after you leave. The is one of them.

Walking through the gardens lined with orange trees, stepping into the courtyard under that incredible canopy of light and flowers, every detail feels deliberate, almost cinematic. The craftsmanship is extraordinary — carved ceilings, intricate zellige, warm lounges where time seems to slow down.

What makes it special is not only the beauty of the place, but the atmosphere. Quiet elegance, impeccable service, and that rare sense of calm that only truly exceptional hotels manage to create.

Before dinner at Sesamo, we spent time wandering through the palace, moving from the gardens to the lounges, discovering corners that feel both intimate and grand at the same time.

It’s a place where architecture, hospitality and Moroccan craftsmanship come together in a way that feels timeless.
