Glimpses from Burgundy with where it’s been a privilege to collaborate with on tasting workshops and adventures in the field. Literally.

We’ve been enjoying sun and wine (and a lot of Époisses) with our 16 guests from across the U.S.

Still thinking about our visit to abbey in The Netherlands. Our group was the first to be invited into the abbey for a cheese tasting! I was fascinated to learn that the abbey was founded on a sheepfold in 1881. Soon after, the monks began brewing beer, but cheesemaking only started in 2015. The abbot told us that he started a creamery to create community.

Today, there are 19 monks at The Abbey of Our Lady of Koningshoven (down from nearly 200). They pray 7 times a day, starting at 3:30 a.m. They rise at 3 a.m. to make cheese, using organic local milk from sheep, cows and goats.

Their cheeses — like their Trappist beers — sustain them and support their charitable work, like housing refugees and asylum seekers. I found their cheeses to be exceptional — beautiful milk, beautiful mission. #

Madame Fromage shows us three European cheeses that are great to take biking, hiking, and on picnics! Who's up for an adventure?

Délice de Pommard is a triple cream from Burgundy, France that is rolled in mustard seeds. It's great for picnics because it comes in its own little carrying case, and you can dip crackers, chips, and celery sticks.

Pepato PDO is a peppercorn-studied sheep's milk cheese from Sicily. Take it on a hike and enjoy it when you need some protein. It tastes a bit like salami and is great with crusty bread and fresh tomatoes.

Saint-Nectaire PDO is a sturdy cheese that works well on a bike ride. Bring your pocket knife and some dried fruit. It's a traditional cheese from the Auvergne region of central France, where cows graze on volcanic soil. It tastes like minerals and hazelnuts.

Look for these outdoorsy options at your local cheese counter, and enjoy adventuring with some new cheeses this summer!

Road report! I’m teaching with in Belgium & The Netherlands this week, offering pairing workshops that involve cheese, beer, and chocolate. Sharing a few favorites, including Chimay Bruin paired with:

🇧🇪 Herve PDO
🇳🇱 Aged Gouda
🇨🇭Blue Brain

I love pairing beer and cheese, especially big effervescent Trappist beers that cut through rich textures and caress bold flavors.

Our guests also loved tasting sour beers at Cantillon — sours are an unusual style, but they’re so good with unctuous washed rinds.
