When bitter flavours come into contact with the human tongue it stimulates a sequence of events that culminates in the flow of digestive juices to the stomach, liver, duodenum and pancreas; an evolutionary trait that recognises bitter tastes in poisonous plants and mouldy foods as potentially harmful to the body. It is for this reason that digestivos are typically rich in alcohol, intensely bitter, and comprised of spirits produced with botanicals that are known to assist in the digestion of food.
Our green walnut liqueur, Nocino, is one such traditional digestivo that works wonderfully in an array of after dinner drinks such as Negronis and Black Manhattans.
