IMPORTANT ANNOUNCEMENT 🫢

Hope your all well?
So as you may or may not know..three years ago I ended up in hospital with three fully ruptured disc's after months of trying to get by and an over reliance on pain relief.

As a self employed business man, I alone, am responsible for earning my money and within that alone, brings on a lot of stress and pressure.

For the last three years ive felt fine and had no troubles with my back but last month I felt at go and once again through my own fault probably rushed back to work sooner than I should have.

Well today I have to fulfill the promise I made to myself when I got out of the woods three years ago.
I told myself if I ever felt back pain again I would stop and heal before it got worse and thats what I need to do now.

My only hope is that I can heal stronger and better and come back with a vengeance.

A quick and brief one before heading out to work..

Scottish cranachan..an absolute must when you come to Scotland. Raspberries, cream, honey and whiskey..simple and effective πŸ˜‹

But that doesn't mean it needs to look simple

Here's my take..

Raspberry and honey bavarois, mirror glaze, oat biscuit base, vanilla creameux, raspberry gel and a whiskey gel

Its all the same ingredients just put together in a different way.

Cake club for the month of May is now live and the orders have been coming in thick and fast

Based around pastry we have our passion fruit and milk chocolate mille feuille and our choux of banana chocolate and peanut butter πŸ₯œ 🧈 πŸ˜‹

An excellent flavour combo and both have contrasting and complexed profiles.

Cake club will be the weekend of Friday the 29th and Saturday the 30th

Our second bake is a hybrid of a Paris-Brest and my son's and I's favorite sweet sandwich filling..

Peanut butter - chocolate - banana

Choux pastry with an chocolate craquelin, peanut butter mousse, dark chocolate creameux, fresh banana and a little bit of dulce de leche

You get sweetness, nuttiness, bitterness....loveliness

Its rich but is also well balanced out by the bitter tones of dark chocolate and the peanut butter. Fresh banana just rounds it all of.

Trust me..wee know what works

If you watched my last reel youll know that this month's Cake Club is based around pastry and more specifically puff and choux pastry.

Here's my puff pastry offering..

Milk chocolate - passionfruit - sea buckthorn

A puff pastry mille feuille layered with milk chocolate creameux and a passionfruit curd, topped off with a sea buckthorn gel and white chocolate crumb.

Get ready to get nice and creamy but with that little bit of tart tartness.

Perfect as we start to see brighter weather on the horizon and just before the berries of summer start to come
