Some of the foods I was eating every single day, foods I had been told were good for me, were making me sick.
Not pizza, sugar, or anything I could have easily justified cutting out. I'm talking about certain veggies, lentils, and whole-grain bread.
Guess what? Plants can't run away from predators. So they developed their own chemical defence system. LECTINS!
Lectins are in grains, legumes, nuts, and certain raw vegetables. They're in a huge amount of what we've been told is a balanced, nutritious diet.
For a lot of people, their body handles them just fine. But for those of us with sensitive gut lining, lectins can cause significant inflammation. They can trigger an immune response that shows up in our joints, our skin, or our nervous system.
Gluten is a lectin. It's the one that gets all the attention. However, when I cut out gluten and kept eating other high-lectin foods, I barely improved. It was only when I understood the full picture that things started to shift.
This diet can feel limiting if you do it the wrong way. But even the diet is not forever! Because, guess what? Your gut lining will heal! Which means you’ll be able to have the foods you love AGAIN without feeling bloated, tired, or in pain anymore!
That's why my recipes these days are satisfying, high protein, and even contain gluten sometimes. Because once the body heals, it can handle it again. It will even loooooveee the food it's struggling with right now.
