CHEESE + MARMITE SAUSAGES

Cracking sausage this one, using an ingredient that’s loved or hated by everyone.
The education behind this one is that the Marmite changes flavour and the end result is umami heaven.

You’re not going to get punched in the face with marmite, I’m using this cleverly to pair with the cheese in order to convert people to eat more marmite. It’s a magic condiment.

Just some photos from the last week..

I take hundreds of pictures, mostly sausages or cats, or screen grabs of random recipes or food ideas I want to manipulate.

These are some things Ive not done for a while and brought them back for markets.
Like they used to say … it’s like riding a bike.

I imagine now they say e-scooter

If you’re lucky I might see if I’m able to put some of this stuff online in the next day or so (minus the sausage rolls, they sold out super quick)

MAPLE BACON SAUSAGE 🍁🥓

Looking at options for a cleaner sausage, reducing allergens and any unwanted nasties to make this delicious and user friendly.

British Pork Shoulder
Smoked Bacon
Maple Syrup
Marjoram
White Pepper

In essence it’s leaning more towards an American style breakfast sausage but has many uses.

GOUDA + APPLE SAUSAGE 🧀🍏

A lovely little mix of British pork shoulder, Gouda, Apple, Guajillo chilli, Rosemary, Mustard and Brown sugar.

Gouda for me is a better cheese inside a sausage than cheddar. That’s just my personal opinion.

BLACK FOREST GATEAU SAUSAGE 🍒🍫

No it’s not full of cake, or chocolate chunks.
There’s a lot more to making a sausage than just sticking all the ingredients in and hoping for the best.

I’ve used the flavours of a Black Forest gateau to compliment some fantastic 6 week aged British beef.

We have 70% dark chocolate to create an earthy base, double cream to enhance the richness, vanilla to give a light floral essence, maraschino cherries (the real ones), cherry syrup.
I’ve also used some smoked beetroots which I dehydrated into a powder to build the bridge between the earthy chocolate and the sweet cherries.

Im in no way building a cake here but the ingredients work together to compliment the aged beef.

Interesting one, would definitely do this again!

SOUR ORANGE CURRY SAUSAGE

Fun fact - this curry doesn’t actually contain any oranges.

In the words of

“Sour orange curry came about when I was developing a Beef rendang , using a similar paste made from dried Sichuan chilli’s , I built a curry using chicken stock rather than coconut milk, seasoned with tamarind, palm sugar and fish sauce it’s a balance of flavour that highlights my favourite type of cooking. It’s beautifully moreish….like crack.”

Trying to honour this beautiful dish he created as a sausage was never going to be an easy feat. Using lamb as a base I tried to separate 2 flavours , both curry based with different acidities and flavour profiles.
