Once your chicken passes 75°C, the muscle fibres contract tightly and squeeze out moisture. The temperature rise accelerates here beyond the goldilocks zone as the water (which buffers temperature change) evaporates, leaving the meat with less thermal mass. It's a doom spiral. What Are The Benefits Of Using A Cooking Thermometer?

As a chef for 25 years, Food thermometers allow us to check if food has been cooked to a safe temperature.

We cannot see bacteria, and whilst over time we improve our instincts of doneness visually, we constantly probe our cooking and record the temperatures.
This is part of the Environmental Health legislation.

So if us professionals are using temperature probes, it's a good indication that you should too.

Cooking to the correct temperature kills bacteria. It ensures food reaches the minimum internal temperature required to kill harmful pathogens like salmonella and e. coli.

Key Internal Cooking Temperatures to Know

Poultry (Chicken/Turkey): 74°C

Ground Meats: 71°C

Fish: 63°C

Beef/Pork/Lamb (Steaks & Roasts): 63°C (with a 3-minute rest time)
