Blueberry Muffins! ๐ซ๐งโจ
Healthy homemade blueberry muffins without any preservatives or refined sugars.
Made with ground almonds & coconut oil for protein & healthy fats, maple syrup which is low GI, a few fresh blueberries full of antioxidants and I admit a few white chocolate drops to entice my teenager to eat them instead of the shop bought variety. It worked! They were a hit ๐
Using ground almonds & coconut oil also helps keep blood glucose levels down which means youโre less likely to have a sugar rush & crash and feel the need to reach for more sugary snacks to keep your energy levels up. Nuts & saturated fats like coconut oil keep you feeling fuller for longer and are slow energy releasers which helps prevent further cravings & also helps to regulate your hormones.
Recipe for Blueberry Muffins:
60g coconut oil
200ml milk of choice, I went with almond
2 tbsp lemon juice
6 tbsp maple syrup
1 tsp vanilla extract
Pinch of salt
150g ground almonds
150g gluten free flour
2 tsp baking powder
1/4 tsp bicarbonate soda
100g fresh or frozen blueberries
Melt the coconut oil in a pan and mix all the other ingredients in, carefully folding the blueberries in at the end. They are great as they are but if you fancy it you could sneak a few white chocolate drops in there too ๐คญ
Pour mixture into a prepared muffin tin with muffin cases in and bake in the oven for 25-30mins or until a skewer comes out clean.
