Tottingworth Farm Tottingworth Farm is a traditional family run farm in the heart of the High Weald of Sussex.

Tottingworth Farm covers 200 acres of permanent pasture and ancient woodland and supports herds of Limousin, British Blue and Galloway cattle together with a large flock of sheep. The farm was originally purchased in 1957 by Dennis and Ruby Browning and today, some 50 years later it is still in the same family, run by their granddaughter Sarah Wareham assisted by her brother Michael. What makes To

ttingworth so special is the small abattoir that is in the middle of the farm and is central to the operation. Despite competition from the large multi-national corporations, the abattoir remains a success and still operates to serve the farming community throughout the South East. More recently a full butchery operation has been added to the site, which means Tottingworth can supply its customers – be they farmers selling direct, catering, retail or wholesale customers with exactly the cuts, packaging and quantities they require. In order to meet increasing demand for locally produced meat, that can be traced to source, Sarah has been building up the wholesale and retail side of the farm business. A farm shop now means members of the public can buy their meat direct from the source, as well as a range of other local products. So whether it's Romney Marsh lamb, Sussex steaks or pork from the newly created South Downs National Park, Tottingworth can deliver meat to your door that has been raised locally, killed, hung and butchered on the farm. Food miles are kept to an absolute minimum and you can offer your customers a special product.

🍂 How is it September tomorrow?! 🍂

Autumn is officially around the corner and that means darker evenings and comfort food on the dinner table. 🍽️

Want to cook a hearty autumnal dinner this week? Pop everything in one tray, whack it in the oven, and dinner's sorted with barely any washing up.

This week we're loving a sausage, chicken and squash traybake from The Hairy Bikers, which is a guaranteed hit with the whole family. Pop into the farm shop this week for the best Tottingworth sausages, the tastiest chicken and quality fresh veg.

Traybake recipe:

4 chicken thighs, skin on, bone in
4–6 Tottingworth sausages
500g/1lb 2oz butternut squash, cut into wedges
2 red onions, cut into wedges
few sprigs thyme, or 1 tsp dried thyme
2 tbsp olive oil
50ml/2fl oz red wine
1 tbsp maple syrup
1 tsp red wine vinegar
½ tsp chilli flakes (optional)
200g/7oz chestnut mushrooms, halved
salt and freshly ground black pepper
fresh parsley, roughly chopped, to serve (optional)

Method
1 Preheat the oven to 220C/200C Fan/Gas 7.

2 Arrange the chicken thighs (skin-side up), sausages, pumpkin and red onions in a roasting tin and season with salt and pepper. Sprinkle over the thyme and drizzle over 1 tablespoon of the oil.

3 Mix the red wine with 100ml/3½fl oz of water and pour this in. Roast for 30 minutes. Turn the sausages over halfway through cooking to help them brown.

4 Mix the maple syrup with the red wine vinegar and then drizzle it over the roasting tin. Sprinkle over the chilli flakes, if using. Add the mushrooms and drizzle with another tablespoon of oil.

5 Roast for a further 25–30 minutes, or until cooked through and well browned. Serve with any pan juices spooned over, sprinkled with parsley if using.

THANK YOU 😊to everyone who has applied for the positions we have in our Cafe. We are still looking for someone to help us run our busy kitchen. Here are the details of what the job covers:

CAFÉ KITCHEN
DAYS: Tuesday, Wednesday, Thursday and Sunday
HOURS: 8:30am–3:30pm
START: September

Main Duties
* Preparing our homemade ready meals for sale in the Farm Shop.
* Preparing and cooking food for our café breakfast and lunchtime menu.
* Food preparation, including preparing ingredients and getting the kitchen ready for service.
* Assisting the kitchen team during busy café services.
* Helping to maintain high standards of food quality, presentation and consistency.
* Following food hygiene, allergen and kitchen safety procedures.
* General kitchen duties and helping the team wherever needed.

WHO ARE WE LOOKING FOR

We are looking for someone who already has some cooking or kitchen experience and is confident with basic food preparation and cooking. You do not need to be a qualified chef, but you should be a good, enthusiastic cook with a genuine interest in food and ideally be looking to develop a career in cooking or catering.

You should be:
* Comfortable working in a busy kitchen environment.
* Confident with basic cooking and food preparation.
* Keen to learn and develop your cooking skills.
* Reliable, organised and able to work well as part of a team.
* Able to work efficiently during busy breakfast and lunchtime services.
* Interested in homemade food and using good-quality ingredients.

Further training can be provided to help the right person develop their skills and take on more responsibility within the kitchen.
