Our friend Lucy Rowe showed us how simple it is to make a gorgeous roast chicken dinner for a weeknight or Sunday roast meal. Combining a selection of seasonal veg 🥕🥔🧄 and a whole Thoughtful Producer chicken 🍗 in a single pan is quick and easy, with results that will please any crowd!
Here’s Lucy’s recipe for a “One Pot Roast”:
1x Whole Thoughtful Producer Chicken
2x Red Onion
3x Carrots
2x Parsnips
1kg New/Baby Potatoes
1x Lemon
1x Garlic Bulb
Fresh thyme
🔥 Preheat oven to 200C fan
🥕 Peel and chop carrots and parsnips into long batons
🧅 Chop red onions into large pieces (I did 6th’s but can vary depending on the size of your onions)
🧄 Peel and smash all garlic cloves, keeping 3 cloves to the side
🫙 Chuck into a roasting dish with olive oil and potatoes and season liberally with salt and pepper
🍋 Cut lemon into quarters and stuff into the chicken with thyme and remaining garlic
🧂 Season chicken with salt and pepper and place on top of veg
Pop into the oven and cook for 20 minutes, turn heat down to 180C and continue to cook for 15 mins per 500g or until the pop-up timer pops
⏳ Rest for 20 minutes before carving
