Foraging for the children in permaculture learning day lunch at SRUC Barony Campus last Sunday. Gathering spruce tips to make the lovely springtime spruce tip syrup to accompany nettle cake with mascarpone or toasted cashew nut cream for vegan/dairy free diets.
Gathering seaweeds, samphires, sea beet and sea kale for a seaweed pickle and the Scottish tabouleh which accompanied a green goddess tart and nettle pesto. Guided by Nic Coombey's (Solway Firth Partnership) expert knowledge and with Jan Hogarth SCAMP, we clambered over rocks to the sounds of the receding tide and skylarks.
