A tasty recipe to enjoy before the Autumn sets in! Thanks to Chef Sophie Hyam

Avocado Mango Salad

INGREDIENTS
1 ripe avocado peeled, pitted, sliced
1 large ripe mango, peeled, pitted, and diced
1/2 red onion, finely diced
1/2 red pepper diced
1/2 red chilli, sliced cilantro, chopped
60g bag of pea shoot salad
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon honey
1 teaspoon toasted coriander seeds
1/2 teaspoon dried chilli flakes
Salt and pepper to taste

Method

Toast coriander seeds in a dry pan until slightly brown
Allow to cool
Prepare all salad ingredients as above.
Whisk lemon juice, olive oil & honey together.
Place peashoot salad on bottom of dish.
Arrange salad ingredients on top
Dress with olive oil mix.

A quick tasty recipe to enjoy with our Tamarind Sauce from our friend Chef Sophie Hyam.

Masala Fries

Such a quick & easy snack / dinner accompaniment

Bag of Frozen Sweet Potatoes Fries

1 tablespoon olive oil
1 teaspoon cornstarch
½ teaspoon chili powder
½ teaspoon salt (adjust as per taste)

1/2 teaspoon chilli flakes
1 teaspoon chaat masala
2 tablespoons Bombay mix
2 tablespoons plain yogurt
1/2 Sliced red pepper
Fresh Coriander
Pomegranate Seeds
Chopped Spring Onion
Red Chilli sliced

Combine the cut sweet potato with olive oil, cornflour, chili flakes, salt, and chaat masala. Mix everything well.
Place on a baking sheet
Air Fry 180oC 8 -10 minutes

Once cooked top with
Plain Yogurt
Sliced red pepper
Bombay Mix
Fresh Coriander
Pomegranate Seeds
Chopped Spring Onion

Serve with a good portion of Auntie's Tamarind Sauce

Monday recipe inspiration. Another super quick and tasty snack to enjoy with Auntie's Indian Ketchup. Thanks Sophie!

Sweetcorn & Ginger Fritters

Quick & easy cup
Method

1 cup tinned, drained sweet corn
½ cup chick pea flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon ginger paste
1 large egg
¼ cup milk
2 tablespoons chopped spring onions
Vegetable oil for frying
Garlic Chives for decoration (optional)

Prepare Batter:
In a bowl, mix flour, baking powder, ginger paste and salt. In another bowl, beat the egg and milk together. Combine wet and dry ingredients, then fold in the sweetcorn and spring onions.
Heat Oil:
Heat about ¼ inch of vegetable oil in a large skillet over medium heat.
Fry Fritters:
Drop spoonfuls of batter into hot oil, flatten slightly with the back of the spoon. Fry for 2–3 minutes per side until golden and crispy.
Drain:
Remove fritters and drain on paper towels.
Serve with a side of Auntie's Indian Ketchup

Ginger & Coriander Maple Carrot Skewers

INGREDIENTS
2 large carrots
2 Tbsp maple syrup
1 teaspoon ground coriander
3cm piece of ginger, peeled and finely grated
1 Tbsp vegetable oil
Salt & pepper
10g pumpkin seeds
Edible flowers to decorate
½ cup coriander leaves

4 bamboo skewers, to serve
EWA’s Ginger & Coriander Sauce

METHOD
Soak the bamboo skewers in water for at least 30 minutes before using.
Peel the carrots and slice into diagonal rounds.
In a large bowl, combine the maple syrup, coriander, ginger, and vegetable oil.
Season to taste.
Thread the carrot onto skewers in an accordion fashion.

Set Air Fryer to 170oC - air fry mode
& air fry 15mins.

Put onto a platter, sprinkle over pumpkin seeds and decorate with edible flowers.

Dress or dip EWA’s ginger-and coriander dressing.

Amazing with a salad, on a sandwich or wrap. If you eat fish it is an incredible accompaniment.

"AT 70, when most men and women are long retired, supergran Gurmit Pannum is busy doing what she loves most - cooking at her top restaurant in Manchester. She, along with her family, own Shimla Pinks, favourite curry house of the famous. Posh and Becks love Pinks' spicy fare, Justin Timberlake (already minus Britney!) has quaffed larger with his vindaloo while Robbie Williams orders a takeaway when he's in town. But celebrity status does not phase granny Gurmit - after nearly 40-years in business with husband Gurmain, she knows hard work and consistency are the key of success.

Gurmit's working day would floor a healthy 21-year-old. It starts at their family home in Coventry over 100 miles from work. She rises at 9am cleans and puts the home in order before cooking for her husband, five years her senior and retired. She then jumps into her car and drives herself to the restaurant. After this two hour journey through heavy traffic, many would be ready for a a snooze, but for super-gran the serious part of the day has just begun. She is in charge of all the restaurant's vegetarian dishes and with increasing emphasis on healthy eating this is an ever expanding menu. Said Gurmit: "I love cooking which is why I entered the business in the first place. I couldn't sit at home and do nothing, I like to keep busy which is why, touch wood, I am still very healthy." Gurmit works through the afternoon into the night when the restaurant is packed and activity in the kitchen reaches a crescendo...."
