This cake was in and out like a fiddler’s elbow (of the fridge, that is)!
Battling the butter melt is a challenge in this hot weather, and I ended up finishing this vanilla and strawberry cake after the sun went down!

Being one of a triplet, sharing a birthday celebration is the norm to me.

Perhaps that’s why I enjoyed this so much - making birthday cakes for a brother & sister whose birthdays fall close together, and who, like me & my sisters, get to share the celebration!

The blue one has vegan blueberry buttercream, blueberry syrup & compote filling, and the pink one is filled with strawberry compote, syrup & vegan strawberry buttercream.

I love finding pretty things to put on a cake, and physalis fruit looks so summery on this vanilla birthday cake.

The tropical vibe continues with pineapple and passion fruit compote filling and coconut and pistachio buttercream.

Dried oranges, blackberries, pistachios and tropical meringue kisses finish the decoration.
