Popping with colour, bursts of flavour and freshness this is pure sunshine on a plate. A zingy beet & lime salsa, pea & tomatillo salsa and kale mushroom quesadillas make for a nutritious and delicious start to the week. The lovely guys stock tortillas and cheese for anyone in South East London wanting to make these at home :).

The perfect hash up. Packed with flavour, this brilliant brunch is quick to put together and a big treat for the tastebuds.

Tacos may sing brightest on balmy beaches but the explosion of rich flavours here makes these baked cauliflower tacos the perfect autumn accompaniment.

Loaded with spices, a rich peanut mole, raisins, almond feta and pickled pink onions we could dine on these all winter long.

Crisp potato cakes with wild garlic salsa and organic purslane.

Foraging for wild garlic is one of the limited joys that lockdown brought us. We are lucky that it grows abundantly in the woodlands near our home, it tastes delicious and nothing beats cooking with freshly picked produce. Tomatillo salsa is an excellent way to use it (though cashew pesto is a close contender).

We’ve been quiet on here whilst our little boy, Archie (8 months), has discovered crawling and is keeping us super busy. Most of every day is spent cleaning rejected food or frantically trying to catch pot plants before they cruise to the floor.

Porridge fingers (weaning winner) and pancakes are our culinary highlights. One day soon though I’ll work out how to carve out “me time” and make grown up food again. @ Crystal Palace, London

Fully loaded vegan nachos. The ultimate comfort food, and in this cold snap, why resist? Crunchy corn tortillas baked to perfection and loaded with smoky pinto beans simmered down with citrus juices and chipotle. Generously topped with salsas and guacamole these were a godsend yesterday. My partner had only one question, why aren’t there more? 🧐

Joining with a Monday bake along. Thanks for this week’s challenge, the brownie. Went with a recipe which pops black beans in there to make me feel less guilty for scoffing the whole damn lot 😂. How have I never made these before?! especially with the insane amount of beans in this house!
They taste infinitely more indulgent than they sound!
