Lamb Bhuna for two people
 Ingredients
2 tbsp neutral oil
1/2 tsp unsalted/salted butter (optional)
300 gms lamb chopped into small pieces.
3 fresh tomatoes or 300 g canned tomatoes, blend into puree
2 medium white onions, chopped finely
1 tbsp ginger garlic paste or crush 4-5 garlic cloves and 1/2 inch peeled ginger coarsely
150 g spinach, washed, chopped and blend into a smooth puree.
1 mild green chilies, slit (optional)
Fresh coriander leaves to garnish
Salt as per taste
6-7 ginger julienne for garnish. (Thinly slice ½ inch of peeled root ginger)
100 - 150 ml warm water
Whole spices:
1-inch cinnamon stick
2 cloves
3-4green cardamoms, cracked open.
1 brown cardamom
4 black pepper corn
1 bay leaf
(You could blend the spices except bay leaf to add in the sauce)
Powdered spices
1/2 tsp turmeric
1 tsp Kashmiri red chilli powder(optional)
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala for garnish
1 tsp dried fenugreek leaves

Method

Take a deep bottom non-stick saucepan or wok and add the oil on medium heat.
Once the oil is hot, add the whole spices and fry for a minute or until they come fragrant.
Add the chopped onions and cook until they become a dark shade of brown. Cook them for approx. 15-18 minutes on medium to high heat. Stir frequently to avoid burning.
Stir in the lamb pieces and cook until the outer coasting changes to brown.
Add the ginger and garlic paste and cook for a minute.
The lamb mixture will get slightly sticky and that’s when you add the tomato puree and cook covered until it’s mushy and there is oil on the sides of the pan which can take up to 10 minutes on medium heat.
Add all the ground spices except garam masala and cook for a few minutes on low heat.
Add a cup of water, salt and the slit green chilies (optional) and give it a good stir and cover and cook until the lamb is soft and cooked. Can take up to 40 -50 minutes on low heat. Add little water if needed.
Add butter(optional) and give it a stir. Once you see oil on the sides of the pan, the lamb is ready.
Switch off the burner.
Garnish with garam masala and ginger juliennes  and coriander leaves

Chicken Lababdar recipe is here 🍗

A fragrant, rich and creamy North Indian chicken curry, flavoured with warming spices such as mace and cardamom. I’ve kept this version cream-free, but you can add a tablespoon of double cream and a little butter for extra richness.

Ingredients

For the chicken marinade

* 600 g chicken breast, cubed
* 3 tbsp Greek yoghurt
* 1 tsp ginger-garlic paste
* ¼ tsp turmeric
* ½ tsp Kashmiri chilli powder
* ½ tsp salt
* ½ tsp black pepper
* 1 tbsp oil

For the sauce

* 2 tbsp oil
* 1 tsp butter (optional)
* 3 medium onions, finely chopped
* 4–5 garlic cloves, freshly pounded
* 1 inch ginger, peeled and pounded
* 1 bay leaf
* 1 blade of mace
* 1 black cardamom
* 1 cinnamon stick
* ½ tsp turmeric
* ½ tsp Kashmiri chilli powder
* 1 tsp cumin powder
* 1 tbsp coriander powder
* ½ tsp cardamom powder
* 400 g tin chopped tomatoes, blitzed
* 5–6 cashews, soaked for 20 minutes and blended with a few tbsp water
* 150 ml warm water
* 1 tsp sugar
* 1 tsp dried fenugreek leaves (kasuri methi)
* Garam masala, to taste
* 1 tbsp double cream (optional)

Method

1. Mix the chicken with all the marinade ingredients and set aside for at least 20 minutes. Soak and blend the cashews, and blitz the tomatoes until smooth.
2. Heat the oil in a non-stick pan. Add the bay leaf, mace, black cardamom and cinnamon. Fry over medium heat until fragrant.
3. Add the onions and cook for 10–12 minutes until golden brown. Add the freshly pounded ginger and garlic and sauté until the raw smell disappears.
4. Lower the heat and add the ground spices, except the cardamom powder if you prefer to reserve it for later, along with the fenugreek and garam masala, which are added at the end. Stir well.
5. Add the puréed tomatoes and cook for 7–8 minutes until thick, sticky and the oil begins to separate.
6. Stir in the cashew paste. Add the marinated chicken and cook over high heat for 2 minutes, stirring well.
7. Lower the heat, add the warm water and adjust the salt. Cover and cook for about 10 minutes, or until the chicken is thoroughly cooked.
8. Finish with the sugar, crushed kasuri methi, cardamom powder and garam masala. Stir in the optional butter and cream, if using, then switch off the heat.

Serve hot with naan or steamed rice.

Notes: For a quicker version, air-fry the marinated chicken until nearly cooked, then add it to the prepared sauce and simmer until fully cooked. Cooking time will depend on the size of the chicken pieces.

Recipe alert! I have shared the “Malabar Keralan Chicken Curry” from my cookbook at various food festivals and cookery demos this year.

For those who have asked me about this recipe, I am penning it down for you.

Preparation time, including marination: 30 minutes
Cooking time: 45 minutes
Serves: 4
Type: Main

Ingredients

For chicken marination:
500g/ 17½oz chicken breast, cut into medium-sized pieces
½ tsp salt
1 tsp ground black pepper
1 tsp turmeric powder
1½ tsp Kashmiri Mirch red chilli powder
1 tsp garam masala

For the sauce:
4 tbsp neutral oil
½ tsp mustard seeds
10 curry leaves
1 or 2 slit green chillies (optional)
3.81cm/1 ½ in root ginger, roughly chopped
6-7 cloves of garlic, chopped
2 medium-size white onion, thinly sliced
1 tsp turmeric powder
1 tsp Degi Mirch red chilli powder (optional)
1½ tbsp ground coriander
2 tomato, chopped or pureed
400 ml/13½fl oz coconut milk
Salt, to taste

Method

Mix the chicken with the rest of the marinade ingredients and leave for 30 mins in the fridge to marinate. Keep refrigerated overnight for best results.

Heat oil in a nonstick pan on medium heat and, once hot, add the mustard seeds and curry leaves. Once the seeds splutter, add the chillies, if using, ginger and garlic, and mix well. Add the onion slices and let the mixture cook until they are golden brown. This can take up to 10 minutes on medium heat.

Lower the heat and add the turmeric powder, Degi Mirch red chilli powder and ground coriander. Fry for 3-4 minutes, adding 1 tbsp of water to prevent burning and create a smooth mix of the spices.

Add the chopped/pureed tomato and cook for 5-6 minutes on medium heat until mushy and the mixture has a thick paste-like texture.

Add the marinated chicken pieces to the mixture, coat each piece, and keep stirring on high flame for two minutes. Lower the heat, add salt, cover with a lid, and cook for 10 minutes or until the chicken is fully cooked through.

Stir in the coconut milk and let it simmer for a few minutes on low flame. Switch off the burner.

Goes well with
Steamed rice
