The streets of Hanoi have been serving this for generations. 🐌

Vietnamese street snails are cooked with banana, tofu and noodles and then eaten at tiny roadside tables.

Beef Pho on the streets of Northern Vietnam, rich bone broth slow-cooked for hours, silky rice noodles, tender beef, fresh herbs and Beansprouts piled high.

Nothing comes close.

This is traditional Vietnamese food at its absolute best.

Pickled Beansprouts: sharp, crunchy, ready in minutes and the perfect finishing touch on everything from rice bowls to noodles to tacos.

Recipe πŸ‘‡

300g Beansprouts, raw & rinsed
1 tsp sea salt
2 tbsp rice vinegar
1 tbsp white wine vinegar
1 tsp sugar
1 tsp sesame oil
1 red chilli, finely sliced
2 cloves garlic, minced
1 tsp toasted sesame seeds

Toss Beansprouts in salt, rest 10 mins, rinse and pat dry. Whisk vinegars, sugar, sesame oil, garlic and chilli. Pour over Beansprouts, toss well, scatter sesame seeds. Chill for at least 30 mins before serving.

Keep in the fridge for 3 days. Pairs with literally everything.

Japchae: Korean glass noodles tossed with Beansprouts, rainbow veg and seasoned beef. One of those dishes that looks impressive and tastes even better.

Recipe πŸ‘‡

200g dangmyeon (sweet potato glass noodles)

200g Beansprouts, briefly blanched

150g beef sirloin, thinly sliced

1 carrot, julienned

1 red pepper, sliced

100g baby spinach

4 shiitake mushrooms, sliced

3 spring onions Β· 3 cloves garlic

Boulgogi Sauce

Marinate beef in half the sauce. Cook noodles, rinse cold, cut. Stir-fry each ingredient separately. Combine everything with remaining sauce, toss well. Finish with sesame seeds.

Beansprouts go in right at the end, keep that crunch. 🌱

You won't want to miss out on this easy lunchtime recipe. 🍳

Homemade Bimbap with crispy rice, seasoned veg and a fried egg, and you CANNOT skip the Beansprouts.

Recipe πŸ‘‡

300g short grain rice
200g Beansprouts, blanched & seasoned
1 carrot, julienned & stir-fried
1 courgette, julienned & stir-fried
100g baby spinach, blanched & squeezed
4 shiitake mushrooms, sliced & fried
1 block of tofu Β· 1 tbsp soy Β· 1 tsp sesame oil Β· garlic
1 egg Β· sesame seeds Β· gochujang to serve

Season each veg separately with sesame oil, garlic and a pinch of salt. Pan-fry rice until golden and crispy on the bottom. Assemble bowl: rice base, each veg in sections, tofu strips, fried egg on top. Finish with gochujang and sesame seeds. Mix at the table.
