Stir fried char siu ho fun/char kway teow
(flat rice noodles)

Ingredients
2 tbsp cooking oil
3 garlic cloves, minced
1 onion, sliced
Mixed vegetables (I used beansprouts and home grown peashoots)
100-150g char siu, thinly sliced. Check out the recipe at
450g ho fun, prepared according to the instructions
6 spring onions, cut into 6 parts

In a bowl mix the sauces:
1/2 tbsp light soy sauce
1/2 tbsp dark soy sauce
1/2 tbsp oyster sauce
1/2 tbsp Shaoxing rice wine
1/2 tbsp sesame oil
Salt and pepper

Method
Sauté the garlic and onion until fragrant and the onion soft. Stir in the mixed vegetables. Cook for 2 mins. Stir in the char siu. Add the ho fun and spring onion. Add the mixed sauces. Mix well. Season to taste with salt and pepper. Transfer to a plate and serve.

Moroccan couscous stuffed aubergine 🇲🇦🍆🫒

Ingredients
2 medium aubergine, halved
4 tbsp virgin olive oil
2-3 tbsp harissa or Moroccan seasoning
Salt and pepper
1 onion, diced
4 garlic cloves, minced
1/2 red pepper
1/2 green pepper
200g couscous, cooked according to instructions
A small handful of black olives, sliced
2 tbsp tahini
1/2 lemon juice
A small handful of coriander leaves, diced

Method
Preheat an oven to 200C/gas 6. Scoop out the aubergine flesh using a spoon. Place the aubergines in a baking tray. Drizzle with 2 tbsp olive oil. Season with 1 tbsp harissa or Morrocan seasoning, salt and pepper. Bake for 20 mins until the aubergines are soft and slightly charred. Remove from the oven.

Cut the aubergine flesh into cubes. Sauté the onion and garlic with the remaining olive oil until the onion is soft. Stir in the aubergine cubes and pepper, cook until they are equally soft. Stir in the couscous and olives. Season to taste with the harissa or Moroccan seasoning, tahini, lemon juice, salt and pepper. Stir in the coriander leaves. Turn off the heat. Fill the aubergine boats with the couscous.

Cajun Chicken and Vegetable Orzo 🍲

Ingredients
200 g orzo pasta
400 g chicken breast or thigh fillets, diced
3 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 courgette, chopped
400 g tin chopped tomatoes
1-2 tbsp cajun spice
80 g pitted black olives, sliced
1 tbsp oregano
Salt & pepper

Metod
Bring salted water to a boil and cook orzo according to package instructions (usually 8–10 minutes). Keep 1 laddle spoon of cooking water. Drain and set aside. Toss with a tiny drizzle of olive oil to prevent sticking.

Heat olive oil in a large pan. Season chicken with salt, pepper, and 1 tbsp cajun spice. Cook 4–5 minutes until golden. Remove and set aside.

In the same pan, sauté onion and garlic for 2–3 minutes. Add cajun spice. Stir tomatoes and pasta water. Cook for 5 minutes.

Add courgette and chicken. Simmer for 8–10 minutes until cooked through and sauce thickens. Stir in olives and oregano. Adjust seasoning. Mix the orzo into the sauce. Turn off the heat and serve.

Pad Prik King (Stir-Fried Thai Chicken Curry) 🌶️🇹🇭

Ingredients
2 tbsp cooking oil
3 garlic cloves, minced
1 onion, diced
5 lime leaves
1 lemongrass stalk, crushed & cut into 3
2 cm galangal, thinly sliced
1 tbsp Thai red curry paste (adjust to taste – I used Mae Ploy)
1 tbsp fish sauce
500g chicken thigh fillets, cubed
100g baby corn, sliced diagonally
100g green beans, halved
Salt & pepper
A handful of coriander leaves, chopped

Method
Heat oil in a wok over medium heat. Sauté garlic and onion until fragrant.
Add lime leaves, lemongrass, and galangal. Cook for 1 minute.
Stir in curry paste and fish sauce, cooking for another 2 minutes until aromatic.
Add chicken and cook until lightly sealed.
Toss in baby corn and cook for 2 minutes.
Add green beans, season with salt and pepper, and simmer until everything is cooked through and tender.
Remove from heat, garnish with coriander, and serve with steamed jasmine rice.

Air fried rice paper chicken spring rolls

Prep 15 mins; Cook: 1 hour; serve 4

Ingredients 

Filling
2 tbsp cooking oil
1 onion, diced
3 garlic cloves, minced
500g chicken mince
300g drained bamboo shoot strips
1 tbsp dark soy sauce 
1 tbsp light soy sauce 
1 tbsp oyster sauce 
1 tbsp sesame oil
Salt and pepper
100g mung bean noodles, soaked in hot water and cut into 1.5cm in length
4 spring onions, diced

20 rice paper rolls
Warm water

Sweet chilli sauce for dipping 

Method
Sauté the onion and garlic in a wok until the onion is soft. Stir in the chicken mince until it is sealed. Stir in the bamboo shoot strips. Cook for 5 minutes until the mince is cooked.  Season with the light and dark soy sauce, oyster sauce, sesame oil,  salt and pepper. Stir in the mung bean noodles and spring onion. Season to taste once more. Turn off the heat and let it cool slightly.

Dip the ricr paper into a bowl of warm water until soft. Place on a plate. Quickly wrap 1-1.5 tbsp of the filling with the paper. Set a side. Once you have 6-8 rolls, brush the air fryer basket with the cooking oil. Place the rolls in the air fryer. Make sure that they do not touch each other. Brush the rolls with the cooking oil. Air fry with temperature of 200C for 15-18 minutes, turn them around halfway through the cooking. Once the rolls are crispy, remove from the air fryer. Repeat the process until the filling is used. Serve with the sweet chilli sauce.

Celebrating the 15th day of Chinese New Year with a dish that tells a story of culture, migration, and tradition ✨

In Hokkien, Cap Go Meh means “fifteen” — marking the final day of the Lunar New Year festivities. Among Chinese Indonesians, this day is incomplete without Lontong Cap Go Meh, a beautiful fusion dish created by early Chinese settlers in Indonesia who adapted to local Javanese flavors.

At the heart of the dish is lontong (rice cakes),  symbolising longevity. It’s paired with rich coconut chicken curry, bamboo shoots, and eggs, each element representing prosperity, harmony, and good fortune for the year ahead.

I often make lontong using pressure-cooked boil-in-the-bag rice (so practical and fuss-free 🙌). For the curry, I prepared Opor Ayam, Telur dan Rebung (creamy coconut chicken curry with eggs and bamboo shoots), then finished it off with prawn crackers and crispy fried shallots for that perfect crunch. 

A dish full of meaning, warmth, and celebration. 🙌

Tahu isi (Indonesian stuffed tofu)

Ingredients

40Og firm tofu, cut into cubes (approx 4cm x 4cm x 4cm)
Oil for frying

Filling
1 tbsp cooking oil
3 garlic cloves, minced
1 medium carrot, shredded
1/4 pointed cabbage, shredded
4 spring onions, diced
50g rice noodles, soaked in water until fully expand, drained and cut into 2cm in length
1 tbsp sesame oil
1/2 tbsp light soy sauce
Salt and pepper

Batter
150g plain flour
2 tbsp rice flour
1 tbsp baking powder
1 tbsp ground coriander
2 tsp ground turmeric
Salt and pepper
250ml cold water

Bird eye chillies
Sweet chilli sauce

Method

Fry the tofu cubes until golden brown, let them cool slightly. Create a hole in one of the side and remove as much filling as possible. Keep the filling aside.

To make the filling, sauté the garlic until fragrant. Add the shredded carrot. Cook for 1 min. Add the shredded cabbage. Cook until both carrot and cabbage are soft. Stir in the spring onions, rice noodles and tofu filling. Season to taste with sesame oil, soy sauce, salt and pepper. Mix well. Turn off the heat. Let the filling cool down slightly.
Fill the tofu with the vegetable filling.
Mix all batter ingredients until smooth. Season to taste with salt and pepper.
Heat the oil for frying in a wok over medium heat.
Dip the stuffed tofu in batter. Deep fry until golden brown all over. Remove the tofu from the wok and transfer to a baking tray lined with kitchen towel. Serve the stuffed tofu with bird eye chillies and sweet chilli sauce.

Kentucky marble butter cake

Ingredients
Butter cake
400g flour plus 1 tbsp for dusting
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
250g caster sugar
250g unsalted butter (room temperature) plus 1 tbsp for greasing
4 eggs
1 tbsp vanilla
250 buttermilk (250 whole milk + 1 tbsp vinegar)
3 tbsp cocoa powder, diluted with 6 tbsp of water to form chocolate paste

Butter glaze
75g unsalted butter
150g sugar
2 tbsp water
1 tbsp vanilla

1 tbsp icing sugar

Method
Preheat the oven to 180C (Gas 4). Grease a bundt pan with 1 tbsp butter and dust with 1 tbsp flour. Ensure that the pan is well covered and remove any excess flour.
Sieve the flour, salt, butter, baking powder, baking soda into a large mixing bowl. Stir in the sugar. Add the butter, eggs, vanilla and buttermilk into the mixing bowl. Beat the mixture at low speed for 3 mins until the mixture is smooth. Divide the mixture equally into 2 mixing bowl. Mix one mixture with chocolate paste.

Pour one laddle spoon of chocolate mixture into the bundt pan to cover the base. Pour one laddle spoon of the vanilla mixture on top of the chocolate mixture. Keep pouring alternately until the mixture is used up. Use a skewer to create a marble effect. Bake for 50 mins until golden.  Insert a skewer into the centre of the cake. If it comes out clean, the cake is done and can be taken out from the oven. 

Leave to cool in the tin for a few minutes. Using the skewer to create small holes on top of the cake.

To make the glaze, mix all ingredients in a sauce pan. Cook over low heat. Keep stirring until the butter is melted and the sugar is dissolved. Don't let it boil and remove from the heat.

Pour the glaze over the cake. Let the cake completely cool in the pan then turn out onto a serving plate.

Dust with the icing sugar before serving.
