POTATO SALAD 🥗 🥔 👇

INGREDIENTS

🌟10 ish medium sized new potatoes
🌟 1 small red onion
🌟1.5. tbsp wholegrain mustard
🌟1 tsp chilli salt
🌟Seeds from half a pomegranate
🌟A handful of rocket/little gem leaves
🌟Cherry tomatoes, green olives
🌟 1 stick of celery finely cut
🌟2–3 tbsp olive oil
🌟 squeeze of lemon juice & apple cider vinegar
🌟Fresh Basil

FIRST - cook the 🥔 by slicing potatoes in half and boil until soft.
DRESSING 👇
In a large serving bowl, mix wholegrain mustard, olive oil, chilli salt& lemon juice/vinegar.
Next add the warm potatoes to the dressing and sliced red onion.
Then add all other salad ingredients in the same bowl and finish with pomegranate seeds, black pepper, fresh basil and serve!
