🤍 A wedding cake left the nest 🤍

The brief: white and yellow - colour theme, lemon for flavour.

A moist lemon sponge layered with cream cheese frosting and a homemade lemon & vanilla bean curd. Light, refreshing and perfect for a celebration in the warmer months.

For the decoration, I wanted to keep the palette soft and elegant. Starting with whites, moving through the natural ivory tones of the frosting and finishing with delicate yellow touches from the flowers.

The blooms came from Hannah at Yorkshire Edible Flowers and once again, they were absolutely beautiful. One of my favourite things about running this business is being able to work alongside other local businesses and combine what we each do best to create something special for a customer.

My mum always used to say that nobody learns well on an empty stomach. She's definitely right.

One of my favourite things about working with training providers is seeing how much thought goes into looking after the people attending. Not just the course itself, but everything around it too.

This time the tables were filled with sausage rolls, three-cheese quiches, cheese pretzels and lemon cookies, all prepared fresh from scratch.

🍰 This week's Rancher's Sweet Tooth

This post is arriving a little later than planned, but that's only because this week has been wonderfully busy and for that, I'm incredibly grateful. 🤍

Back on the counter is Victoria by T.H.N. Light vanilla sponge layered with vanilla cream and strawberry jam, made from scratch.

The Millionaire's Shortbread is making another appearance too. At this point, it's earned its place on the counter. You keep clearing the shelf, so I keep making it. Fair deal 🫶🏼.

And because the sunshine seems to have settled in for a little while, I wanted to add something that's easy to grab and enjoy on the go.

This week's newcomer is a Lemon & Blueberry Cheesecake Pot. Layers of lemon cheesecake, blueberry compote and biscuit crumb, bringing together sweetness, freshness and just enough tang to keep things balanced.

An iced coffee in one hand, a cheesecake pot in the other, and a view across the Yorkshire fields?

That sounds like a pretty good way to spend an afternoon. ☀️🫐🍋

A recent order of our Classic Millionaire's Shortbread and Lemon Millionaire's Shortbread, heading off to a university department. 🎓

What I loved most about this order was the reason behind it: a customer wanted their colleagues to try some of the bakes they enjoy.

There's something really nice about sharing food you love with other people, and that's a big part of what I hope The Hungry Nest can be about.

For this order, the tray bakes were cut into 20 smaller squares instead of our usual larger portions, making them perfect for sharing. Depending on the bake and the occasion, portion sizes can often be adapted to suit your needs.

👀 This week's counter is looking rather tempting... 👀

The pistachio cake is back, bringing together pistachio sponge, pistachio ganache and Scottish raspberry jam. Rich, nutty and quite decadent with the raspberry cutting through beautifully and keeping every bite fresh.

The Cherry Bakewell cake follows closely behind. Almond sponge, cherry jam and a light diplomat cream that brings everything together without weighing the cake down.

And then there's the Lemon Millionaire's Shortbread. A buttery biscuit base, homemade caramel and a layer of lemon curd that adds just enough sharpness to balance the richness of the caramel.

You'll also spot some edible flowers that I start using. They're coming from a local flower farm ( ) and I couldn't be happier to bring another local business in the spotlight ✨️.

Great cakes, quality ingredients and local businesses supporting each other. That's a combination I'll happily keep repeating. 🤍

🌸 Victoria by The Hungry Nest 🌸

Inspired by the classic Victoria Sponge with a few gentle tweaks along the way.

Light vanilla sponge, layered with raspberry jam and a delicate vanilla cream filling, bringing everything together without feeling heavy.

This 6-inch cake comfortably serves 8–9 people and was created for a group of hard-working women who deserved something special. 🤍

I kept the decoration simple: a light dusting of icing sugar and edible flowers grown by a local flower farm ().

Sometimes, that's all a cake needs. 🌺

This week's desserts at The Rancher's Sweet Tooth 🍰

🍋 Lemon & Raspberry Cake
A light, moist lemon sponge layered with cream cheese frosting, homemade lemon curd and raspberry jam. Fresh, bright and full of flavour. This time, we've left out the poppy seeds, making it a great option for those who missed out last time when we had it on the counter.

🍓 Strawberry Oat Bars
Sweet, jammy strawberries tucked between buttery oat layers. Enjoyed as they are or warmed up with a generous portion of custard, especially with this weather doing its best to keep us guessing. 🥴

🍫 Rocky Road
Freshly made and back on the counter. Rich chocolate, plenty of texture and always one of the first things to disappear.

✨ Millionaire's Shortbread
The regular favourite. Buttery shortbread, homemade caramel and chocolate. Simple, classic and somehow never stays on the shelf for very long.

ℹ️❗️ A little heads-up: the ranch will only be open until **Friday (inclusive)** this week and will be closed over the weekend. ❗️ℹ️

🎈 Happy Children's Day to all the little ones out there.

And to the grown-ups too, because once upon a time, we were children as well.

This photo was taken when I was around 10 or 11 years old, sitting in my grandma's kitchen and helping myself to a rather ambitious portion of potatoes 😅.

Some things haven't changed much.

I've always loved food. Not just eating it, but sharing it, talking about it, learning from it and understanding why certain flavours work the way they do.

Looking back, it's funny how some passions find us very early in life.

So if there's something you've loved for as long as you can remember, don't ignore it. Give it a chance. You never know where it might take you.

For me, it eventually became The Hungry Nest. 🤍

Freshly de-shelled pistachios, crushed through the sponges, layered with pistachio ganache and finished with an old-school piping style and soft shades of green.

It felt nice making something for someone who’s usually the one feeding everybody else.
