🥦✨End Veganuary with a Bang!✨🥦

Ingredients

For the Chaat Masala Cauliflower Steak:
1 cauliflower 🥦
2 tbsp vegetable oil 🌻
1 tsp garlic paste 🧄
1 tsp ginger paste ✨
½ tsp Rajah Turmeric Powder 🌕
1 tbsp natural yoghurt 🥛
½ tsp salt 🧂
½ tsp Rajah Coarse Black Pepper 🌑
1 tsp Rajah Chaat Masala 🌿
1 tbsp lemon juice 🍋

For the Channa Masala:
2 tbsp vegetable oil 🌻
1 tsp Rajah Jeera Whole 🌱
1 large onion, diced 🧅
½ tsp salt 🧂
1 tsp garlic paste 🧄
1 tsp ginger paste ✨
½ tsp Rajah Chilli Powder 🌶️
½ tsp Rajah Coriander Powder 🌿
½ tsp Rajah Cumin Powder 🌱
½ tsp Rajah Turmeric Powder 🌕
½ tsp Rajah Paprika Powder 🧡
1 tbsp Rajah Channa Masala 🌟
2 tbsp tomato paste 🍅
4 large tomatoes, diced 🍅🍅
1 tbsp brown sugar 🟤
1 can white chickpeas, drained 🥫
1 cup water 💧
1 tsp Rajah Garam Masala 🌟
1 small bunch fresh coriander, chopped 🌿

For the Garnish:
2 tbsp pomegranate seeds ❤️

Method

Prepare the Cauliflower Steaks:
Trim the cauliflower, keeping the core intact, and slice into 1-inch steaks. Grease a tray, lay the steaks flat, and preheat the oven to 180°C. Mix all marinade ingredients (except chaat masala) and brush over steaks. Toss extra florets in the leftover marinade and place them on the tray. Roast for 1 hour, flipping after 30 minutes and drizzling with oil.

Make the Channa Masala:
Heat oil, add cumin seeds, and fry until sizzling. Add onion and salt; cook for 6-7 minutes. Stir in garlic, ginger, and spices. Cook for 2 minutes. Add tomato paste, water, diced tomatoes, and sugar. Simmer for 5-6 minutes. Stir in chickpeas and remaining water. Simmer for 10 minutes. Mix in a third of the coriander.

Assemble the Dish:
Plate Channa Masala, top with cauliflower steaks, and sprinkle with chaat masala. Garnish with coriander and pomegranate seeds.

Say goodbye to those Monday blues with this comforting Butter Chicken curry from our good friend ! 🍛💛 Perfectly spiced, creamy, and oh-so-delicious - it's the pick-me-up you deserve.

Serves 4

500g skinless boneless chicken thighs, diced
For the marinade

1 lemon, juiced
2 tsp ground cumin
2 tsp paprika
1-2 tsp hot chilli powder
200g whole Greek yoghurt
For the curry

2 tbsp vegetable oil
1 large onion, chopped
3 garlic cloves, crushed
1 green chilli, deseeded and finely chopped
thumb-sized piece ginger grated
1 tsp garam masala
2 tsp ground fenugreek
3 tbsp tomato purée
300ml chicken stock
50g flaked almonds, toasted
2 tsp butter

How To Make Butter Chicken

1. In a medium bowl, mix all the marinade ingredients with some seasoning. Chop the chicken into bite-sized pieces and toss with the marinade. Cover and chill in the fridge for 1 hr or overnight.
2. In a large, heavy saucepan, heat the oil. Add the onion, garlic, green chilli, ginger and some seasoning. Fry on a medium heat for 10 mins or until soft.
3. Add the spices with the tomato purée, cook for a further 2 mins until fragrant. Now take off the heat, allow to cool a little and then pulp with a blender.
4. Return the masala pulp back to the heat and add the stock and marinated chicken. Cook for 15 mins, then add any remaining marinade left in the bowl. Simmer for 5 mins, drop in the butter, then sprinkle with the toasted almonds. Serve with rice, naan bread, chutney, coriander and lime wedges, if you like.

🔥Celebrate Lohri with flavour!🌾 Elevate your celebrations with by tucking in to our delicious Slow Cooked Lamb with Mint Paratha recipe. Tender lamb infused with aromatic spices, paired with soft, fresh mint paratha – the perfect dish to share with loved ones.🎉

🐑Slow-Cooked Lamb Shoulder with Mint Paratha🌿✨

For the Lamb:

1.5–2kg lamb shoulder 🐑
2 onions, sliced 🧅
4 garlic cloves, sliced 🧄
1 thumb ginger, grated ✨
1 tbsp garam masala 🌶️
1 tin chickpeas, drained 🥫
3 bay leaves 🍃
4 cloves 🌸
1 cinnamon stick 🌰
400ml beef/chicken/lamb stock 🍖

For the Marinade:

250g Greek yoghurt 🥛
1 tsp black pepper 🌑
1 tsp cardamom 🌿
1½ tsp cumin seeds 🌱
1 tbsp coriander 🌿
½ lemon, juiced 🍋
1 tsp salt 🧂
1 tsp garlic powder 🧄
1 tsp ground ginger 🌟

For the Mint Paratha:

1 cup fresh mint, chopped 🌿
2 cups wheat flour 🌾
4 tsp oil 🌻
½ tsp salt 🧂
½ cup water 💧
1 tsp cumin seeds 🌱
1 tsp fennel seeds 🌿
1 dried chilli 🌶️
½ tsp paprika 🧡
1 tbsp garam masala 🌟

Method

Lamb:
Marinade: Toast and crush black pepper, cardamom, cumin, and coriander. Mix with yoghurt, lemon, salt, garlic, and ginger. Score lamb and rub marinade all over. Refrigerate overnight.
Roast: Preheat oven to 200°C. Arrange onions, chickpeas, garlic, ginger, bay leaves, cloves, and cinnamon in a tray. Add stock and place lamb on top. Roast for 25 minutes until browned.
Slow Cook: Reduce heat to 150°C. Cover tray and roast for 3 hours until tender. Rest for 20 minutes. Serve with stock as sauce.

Mint Paratha
Dough: Mix flour, 2 tsp oil, salt, and half the mint. Add water and knead until smooth. Rest for 30 minutes.
Spices: Toast remaining mint, chilli, cumin, and fennel. Blend with paprika and garam masala.
Shape & Cook: Roll dough into circles, brush with oil, sprinkle spice mix, pleat into a fan, and roll into snail shapes. Roll out again and cook on a hot pan, brushing with oil, until golden.

Serve and enjoy this flavourful feast! 🥳

Cold weather calling🥶 Beat the chill this January with our hearty, healthy, and oh-so-delicious Plantain & Chickpea Curry!🍛

Perfect for , this comforting dish is packed with flavour and ready in just 15 minutes. Whether you're warming up after a long day or looking for a nutritious, plant-based meal, this curry is your go-to! Recipe below ⬇️⬇️⬇️

Ingredients:
🍌 1 ripe plantain
🥫 1 can of chickpeas
🥥 1 can of coconut milk
🌿 1 tbsp thyme
🧄 4 cloves garlic
🧅 1 scallion
🌶️ 1/2 scotch bonnet
🍂 2 Rajah Bay leaves
🍛 1 tbsp Rajah Mild Curry Powder
🧂 1 tsp Rajah Black Pepper
🌱 1 tbsp Rajah All Purpose Seasoning
🧂 Salt to taste
💧 1/4 cup water
🍯 1 tbsp coconut sugar
🌟 1 tbsp Rajah Turmeric (Haldi)

Method:
1️⃣ Heat oil in a pan over medium heat. Add chopped scallion, garlic, and scotch bonnet. Sauté for 5 mins.
2️⃣ Add bay leaves, curry powder, all-purpose seasoning, black pepper, turmeric, and thyme. Stir well.
3️⃣ Pour in the water and cook for another 4 minutes.
4️⃣ Add chickpeas, plantain, and coconut milk. Stir and simmer for 10 minutes.
5️⃣ Mash half of the curry with a potato masher or blender for a creamy texture.
6️⃣ Serve with rice or roti.
