This season, we have made a significant investment to reduce our use of plastic in the production of our pure, raw honey.

We have removed all of our plastic storage buckets and replaced them with a large, food-grade stainless steel tank. We now also use food-grade stainless steel buckets when transferring and filling the tank. These changes mean that the same durable containers can be cleaned, reused and used season after season, significantly reducing the amount of single-use and short-life plastic involved in our honey production.

We have also found a useful second life for the plastic buckets that are now redundant. Rather than throwing them away, we are using them as growing containers for trees. The trees will be overwintered before being planted out in the spring.

So, the change isn't simply about using less plastic, it's about keeping materials in use for longer, reducing waste and putting our old equipment to work in a way that will ultimately help increase tree cover and provide additional habitat and forage for wildlife and pollinators.

This is a Magnified Honey Crystal

Raw honey contains tiny, naturally occurring particles of pollen, enzymes, and beeswax. These microscopic particles can act as nucleation points, providing a surface where sugar crystals can begin to form. Over time, this natural crystallisation can make raw honey appear cloudy or opaque.

Vibrant Colours Under Magnification

Under polarised light, honey crystals can reveal striking, vibrant colours and rainbow-like patterns. This happens through a scientific phenomenon called 'birefringence', where a material interacts with light differently depending on its direction, producing colourful patterns when viewed between polarising filters.

There are currently a large number of European Hornets hawking Honeybees around one of our apiaries. This is a natural occurrence, and we will not be intervening to stop it. We will also not be harming or attempting to eradicate the European Hornets.

As beekeepers, we accept that this is part of the natural ecosystem and will allow the situation to take its course.

Today I introduced new honeybee queens into my nucs to overwinter. By spring, these colonies will have grown into full-sized hives, ready for next year's honey production.

You can see the queen in her introduction cage. She's marked with a white dot and the number **88** for easy identification. The worker bees will gradually eat through the candy plug in the cage, releasing her over the next few days. This slow introduction gives the colony time to accept their new queen.

I don't normally wear protective gloves like the ones you see in the video. However, I've reached that stage in life where, if I'm using a sharp knife, there's a fair chance I'll end up stabbing my own hand, so today, the gloves seemed like a sensible idea! 😎

Want to be sure the honey you buy is the real thing? Whenever possible, buy directly from your local beekeeper.

New EU honey labelling rules coming into force on 14 June 2026 will require blended honey products to clearly state the countries of origin and the percentage contribution of each country on the label. These changes are designed to improve transparency, help consumers make informed choices, and strengthen confidence in the honey they buy.

Even with improved labelling, buying from a local beekeeper remains the best way to know exactly where your honey comes from and how it was produced. Your beekeeper can tell you about their bees, their forage areas, and the journey from hive to jar.

When you buy local honey, you're getting a fresh, natural product while supporting local beekeepers, small businesses, and the vital role bees play in our communities. 🍯🐝

I had a beautiful new apprentice working with me today at our out apiary. He was so tame and came very close to see what I was up to. I'm sure he's nicking the odd Honeybee, but that's okay.
