The Story Behind BlazingBee Hot Honey
Every exceptional product has a story, and ours begins in the heart of Central West Africa.
While living and working in Gabon and Equatorial Guinea, I discovered an extraordinary pairing of pure honey and vibrant, fiery chillies. The remarkable balance of delicate sweetness followed by an intense, lingering heat was unlike anything I had tasted before. Inspired by that unforgettable flavour, I returned to the UK determined to recreate it using only the finest natural ingredients.
BlazingBee Hot Honey is handcrafted by infusing our own award-worthy raw honey with carefully selected Yellow Habanero chillies. We never simply mix ingredients together; instead, we allow time and nature to create a perfectly balanced infusion that delivers exceptional depth of flavour.
The experience is distinctive. First comes the rich, floral sweetness of our raw honey, followed by the slow, confident rise of the Yellow Habaneroโ€™s warmth. The heat builds gradually, leaving a bold yet beautifully balanced finish that lingers long after the last taste.
Throughout the entire process, our honey remains completely unprocessed. From hive to jar, its natural character, aroma and complexity are carefully preserved, resulting in an authentic artisan product of outstanding quality.
Whether drizzled over artisan pizza, paired with fine cheeses, glazed onto grilled meats, or used to elevate everyday dishes, BlazingBee Hot Honey transforms simple ingredients into something truly memorable.
Pure. Raw. Naturally Infused. Unforgettable.

Today I introduced new honeybee queens into my nucs to overwinter. By spring, these colonies will have grown into full-sized hives, ready for next year's honey production.

You can see the queen in her introduction cage. She's marked with a white dot and the number **88** for easy identification. The worker bees will gradually eat through the candy plug in the cage, releasing her over the next few days. This slow introduction gives the colony time to accept their new queen.

I don't normally wear protective gloves like the ones you see in the video. However, I've reached that stage in life where, if I'm using a sharp knife, there's a fair chance I'll end up stabbing my own hand, so today, the gloves seemed like a sensible idea! ๐Ÿ˜Ž

Watch our Pure, Raw Honey as it flows through a double sieve just 100 steps from the Ewell bee hives, where our hardworking honeybees created it. This video has no sound, but if you stay until the end, we think your mouth will be watering. Enjoy!

This is good news as from 14 June 2026

Want to be sure the honey you buy is the real thing? Whenever possible, buy directly from your local beekeeper.

New EU honey labelling rules coming into force on 14 June 2026 will require blended honey products to clearly state the countries of origin and the percentage contribution of each country on the label. These changes are designed to improve transparency, help consumers make informed choices, and strengthen confidence in the honey they buy.

Even with improved labelling, buying from a local beekeeper remains the best way to know exactly where your honey comes from and how it was produced. Your beekeeper can tell you about their bees, their forage areas, and the journey from hive to jar.

When you buy local honey, you're getting a fresh, natural product while supporting local beekeepers, small businesses, and the vital role bees play in our communities. ๐Ÿฏ๐Ÿ

Support local. Know your source. Enjoy real honey.

I had a beautiful new apprentice working with me today at our out apiary. He was so tame and came very close to see what I was up to. I'm sure he's nicking the odd Honeybee, but that's okay.

The Urban Apiary Honey Is Pure, Raw & Unprocessed.

By keeping our Honey raw, it naturally retains:

* Natural enzymes produced by bees
* Beneficial pollen particles
* Natural antioxidants
* The distinctive floral character of local nectar sources

The result is a honey with a richer flavour, aroma, and character that reflects the seasons and the landscape where it was produced.

The Urban Apiary Surrey Honey is local, raw, unprocessed honey produced by our own bees. Its flavour, colour, and character change with the seasons because real honey isn't manufactured, it is crafted by bees and shaped by nature.

Pure honey. Raw honey. Surrey Honey. Just as the bees made it.

As the owner of The Urban Apiary, sustainability and caring for wildlife are at the heart of everything I do. So when the opportunity arose to adopt a donkey named Drizzle, there was simply no way I could say no.
