Have you discovered the vegetable, celeriac? It’s a large root vegetable that has a nutty and anise-like taste and it can be grilled, mashed, roasted, boiled or steamed. In this tasty recipe, the firm structure of celeriac makes it the perfect ingredient for a vegetarian steak.

After grilling, the celeriac takes on a delicious and sweet flavour brought to life with a spicy guest from Argentina, Chimichurri. Chimichurri is a special sauce that’s usually served as a condiment with meat. The translation means “a mix of everything” and in this Chimichurri we’ve infused garlic, chilli, fresh parsley and oregano, olive oil and vinegar to create a spicy sauce to perfectly compliment the celeriac.

The world's healthiest fish supper!

A perfectly cooked piece of Monkfish served on a bed of red peppers, thinly sliced
red onions, with garlic cloves,and artichoke hearts combined with a handful of black olives and the slightest hint of chilli and a splash of white wine.

Keeping with the Fish Supper concept it's served with artisan bread and butter !

Dryanuary is over ! Not that we're suggesting we all forget about living longer and abandon the healthy eating but................we deserve a little treat and Valentines Day is fast approaching! So how about this delicious Beef Cacciatore ? Still packed with vegetables and with olive oil the secret here is blending the flavors of onion, peppers and tomato into a fine sauce. Get in the Blue Zone on blue Monday and detox with one of the most medically researched grains. Barley is proven to help combat 20 chronic diseases including diabetes and some cancers. The grain itself is a favourite of mine and travels from mediterranean to more home based uses as a staple and favourite in old Scottish recipes.

Here we combine caraway, fennel, cumin, coriander, garlic with the staple olive oil and roasted vegetables. Add feta if your not vegan and let us know if you'd enjoy some pine nuts added. Serve hot or cold.

Good morning all! A bit of different message today. As some of you will now my folks are very disabled and rely now on care services and family to either prep a hot meal or use ready meals. Even this can be a struggle and the quality isn't always great.

There's very few in person services now to fill this need and so we've decided to offer a personal service not only delivering but heating and plating for a limited number of people in need of a little more help. The food will be from the www.cucinamediterranea .co.uk menu with a special rate circa £5 per main course.

The service might be of use regularly or even simply occasional respite where the usual way of managing aren't available.

Can you please bear us in mind and like / share this post . As an added incentive we're offering a free main course for the every additional 25 followers.

Continuing with our healthier January in the Blue Zone and enjoying the current winter sun we're offering an amazing salad - using roasted fregula pasta and This starter brings together some of the best of popular Sardinian ingredients including olive oil, basil, lemon, capers and garlic.

Hazelnuts and eggs provide ample protein, so no meat is needed there.

If you'd like to follow the taste from some of the longest-living men in the world, a group of shepherds in Sardinia, by adding a little fresh sheep’s milk or goats cheese, either of which are a natural companion to this dish.

WE'RE GETTING IN THE ZONE FOR JANUARY - THE BLUE ZONE!

What’s the secret to living an extra 10 years? Blue zones are places such as Sardinia, Italy and Ikaría, Greece; areas with the most centenarians and the highest middle-age life expectancy. Why? Diet for one!

So for the month of January we're showcasing recipes from these regions that are packed full of taste and support a healthy diet in keeping with the Blue Zone principles. It also gives the opportunity to use rarer ingredients such as in the dish of Clams made with Fregula pasta.

Fregula is an ancient form of pasta, made with durum wheat flour (semola) and water. The process is very similar to the one used to make couscous: salted water is sprinkled over the flour in a special dish called a scivedda, then rubbed in a circular motion until tiny balls of dough form. The raw fregula is then toasted, which brings a subtle nuttiness out and gives the pasta its sandy final colour. Because it’s made from pasta bianca dough, fregula is vegan. (give us a call if your vegan and we can substitute sh*take mushrooms in place of the clams )

The fregula is toasted to give extra texture. The genius in the simplicity of this dish which combines garlic . olive oil, concentrated tomato paste and fresh parsley with the full flavour brought into every element by boiling the clams and sauce with the fregula.
