Homemade Seared salmon salad

Ingredients:
500g small new potatoes
200g french beans / string beans
1/2 red onion, thinly sliced
1 tsp vinegar
1/2 tsp sugar
1/2 tsp salt
2 eggs
500g fresh salmon
1 tbsp olive oil
4 tomatoes, or handful of cherry tomatoes
4 anchovy fillets in oil,chopped
2 tbsp small capers ( optional )
50g olives
2 tbsp roughly chopped basil
1 tbsp roughly chopped parsley
Handful rocket leaves

For the dressing:
1 tbsp red wine vinegar
1 tsp wholegrain mustard
1/2 tsp honey
4 tbsp olive oil
