Introducing Leghorn, I can't put it much better than Tim Hayward's review

"A rather unusual and exceptionally interesting smashburger.

at The Leghorn Hen Company sent me some of their amazing chicken mince from 'Breeder' birds. These come from the farms that produce the birds that are then kept for meat or egg laying. They're basically the parents of your regular chooks.

These birds live much longer lives than any you're likely to have eaten before, so the meat is different. They mince the thigh meat and some of the 'pluck' or offal to produce something with a unique taste and texture that's also extremely sustainable.

In a smashburger like this, the meat retains juiciness, even when cooked through. The texture is lighter than you're expecting and the flavour is somewhere between strong chicken and some of the veal/beef/pork mixes you'd use in Italian cooking. (It was so good I got out my BurgerPlinth™)

It's incredibly rare that I get to eat something that tastes totally unique, but this is definitely one of those occasions. It's also just standout delicious.

A few restaurants are serving it and they have a network of suppliers so you might be able to get your hands on some.

The rest of mine is going into polpetti and an experimental ragu."
