Asparagus Seasons 👇👇👇
Well under way and earlier too this year with no restrictions to celebrate them other than tasting all the different in varieties readily available in the markets around the globe. March -June.
From the common spears of green and white to Violet and Wild Asparagus starting in Europe in mid-March then as the warmer climates in Uk form in April-May it’s a great few months of healthy harvests.
I like to put the most time into preparation with my Asparagus as well as all my mis en plas.
Depending on the final results I will carefully select the sweetest and sturdiest stems and utilise the vegetable in many different cooking techniques across my repertoire style.
Cooking with simple process’s and not a lot of over powering aromatics.
-With the dishes sometimes being on its own, in a salad or accompanied alongside Spring Lamb, white meat or fish.
