Some new dish development and specials for !

- South Italian sausage, chilli and fennel ragu with Italian ricotta, maldon salt, and EVOO with conchiglie

- Ricotta and spinach bucatini with balsamic caramelised onions and parmesan

- Basil and lemon pesto with crispy roasted Jersey Royal potatoes and parmesan, with conchiglie

- Monkfish cooked in white wine and EVOO with a dill and lemon gremolata and confit garlic pangrattato

Well here it is! I'm the new head chef at Il Pastaio, Glasgow City Centre! I'm running my own menu, sticking with what I've been doing for the last 4 years, and continuing with what I love doing the most, cooking for others. I've got an open kitchen, a great team to work with, and creative freedom to play. I can't wait to see what we get up to! Tuesdays to Sundays, 12-9! That's lunch AND dinner!

Hello! I'm undergoing a big change with this profile, a clean slate almost! I have accepted a new job here in Glasgow which I will be announcing soon when the paperwork is all done and everything is a go!

I am to be a head chef, and most exciting, I get to bring my own menu, my own food and inspirations, and be working with other chefs to bring new dishes! And, the location is fantastic, keep your eyes out for where I will be 👀

Quite a few of you may have seen my hairier counterpart, my younger brother Wallace doing front of house! Wallace makes all the pasta now (I've trained him well) and does all sorts of things behind the scenes from helping with sauce prep to managing the starters and desserts. I managed to rope him in for a little while whilst I get started here in Glasgow!

Wallace is really a professional musician, an RCS graduate and traditional musician. So when he's not making pasta with me, you may see him in sessions and gigs around Glasgow!
