Some nice news to report - the Cognac Barrel Aged Stout we brewed with The Good Spirits Company for their 10th birthday has picked up a silver medal in the International B**r Challenge!

As the name suggests this is a worldwide brewing contest and it’s quite a prestigious affair, so to have been recognised for our work is a significant honour. Big thanks to Jane and the Good Spirits team for inviting us to brew the b**r and for supplying us with such a beautiful barrel to mature it in.

As it happens we’re due to brew the base b**r again next month and have some equally impressive oak lined up for the ageing process, so watch this space… and in the meantime the few remaining bottles of TEN can be found only at the excellent Good Spirits shops.

During the past couple of summers we've made meadowsweet and woodruff cordial, along with raspberry, pineapple and rhubarb, to serve with our Berliner Weisse. Meadowsweet has quite a similar flavour to woodruff, one of the traditional serves offered in Berlin bars, and we really like the almond-vanilla sweetness it brings. It's always a popular choice with festival folks, many of whom are initially pretty sceptical.

The soft, white flowers of meadowsweet have been used to flavour drinks for many years; the name’s apparently derived from ‘mead sweet’ as it was often added to mead, as well as b**r and w**e. Like woodruff it’s a ’strewing herb’, used to scatter on the floors of buildings to give off a pleasant fragrance in the days before air fresheners!

We haven’t done a Berliner this year but we’ve been harvesting meadowsweet again - it grows prolifically near the brewery in Linn Park - which we’ll use to brew a meadowsweet and lemon sour. By the time it’s ready these long sunny days will probably seem like a distant memory, so opening a can will bring a welcome flash of summer sun… ☀

Introducing our first ever NEIPA, Cloudia - a 7.0% pillowy-soft juicebucket packed full of hoppy goodness.

Never ones to rush into trends (our smoothie sour range is forecast for 2037) it’s taken us a while to get around to the New England IPA style. Dry and bitter, that’s us. But like everyone else we’ve been discovering great examples from other breweries over the last few years, really enjoying them, and thinking about what the STF approach would/could/should be.

We went back to the source, researching recipes from some of the first folk to make the style their own. We got into what makes the style distinct from other b**rs and how best to achieve the characteristic features - restrained bitterness, soft, smooth body, intense fruity flavour - while preserving the moreish drinkability that is pretty much our number one goal across all styles.

The result is Cloudia, a new addition to our Regulars range. We loaded it with three superb hop varieties; Dolcita, Nectaron and Citra offer a sweet tropical punch that sits perfectly atop the sturdy Maris Otter malt foundation. Natural carbonation and soft Loch Katrine water - the STF secret weapons - work beautifully well here, keeping everything soft, smooth, gentle and rounded. A touch, just enough, bitterness, for the all-important drinkability.
