Introducing our first ever NEIPA, Cloudia - a 7.0% pillowy-soft juicebucket packed full of hoppy goodness.

Never ones to rush into trends (our smoothie sour range is forecast for 2037) it’s taken us a while to get around to the New England IPA style. Dry and bitter, that’s us. But like everyone else we’ve been discovering great examples from other breweries over the last few years, really enjoying them, and thinking about what the STF approach would/could/should be.

We went back to the source, researching recipes from some of the first folk to make the style their own. We got into what makes the style distinct from other beers and how best to achieve the characteristic features - restrained bitterness, soft, smooth body, intense fruity flavour - while preserving the moreish drinkability that is pretty much our number one goal across all styles.

The result is Cloudia, a new addition to our Regulars range. We loaded it with three superb hop varieties; Dolcita, Nectaron and Citra offer a sweet tropical punch that sits perfectly atop the sturdy Maris Otter malt foundation. Natural carbonation and soft Loch Katrine water - the STF secret weapons - work beautifully well here, keeping everything soft, smooth, gentle and rounded. A touch, just enough, bitterness, for the all-important drinkability.

“Do they sell your beer in The Bank?”

has been one of the most Frequently Asked Questions since starting the business 6-7 years ago - unsurprisingly, since we’re next door neighbours. And the answer was always along the lines of “Sadly, no. They’re owned by a giant pub company who have no interest in dealing with small breweries.”

But - this week, that all changed! The Bank has a new owner and they wasted no time in popping in to buy some beer (Rufus, our 4.0% hazy Pale Ale) which is now pouring on the bar.

We’ve always got on very well with the staff at The Bank and held no hard feelings whatsoever about not being one of their suppliers, but it did always irk me a bit that yet again Big Business prevented some common sense stuff happening so it’s hugely gratifying to now be able to give a different and more positive answer to that oft-repeated question. And it’s pretty cool to be able to go and have a few pints of our own beer there at the end of a busy week, too.

We don’t go in for awards much - usually it costs money and I’m never too sure about the judging situation - but we are automatically included in the annual Untappd Community Awards, which is I believe a summary of the highest rated beers by category and region. So it's free to enter and decided by the beer drinking public, fair enough.

We’ve done pretty well every year so far and this year is no exception; in fact I’d go as far as to say that for two lads in a shed with a third-hand brew kit and a shoestring budget we’ve done really well!

Looking at the Scotland region we have 9 Golds, which is the second highest number behind Vault City. We brew the highest rated NZ Pale, the highest - and second highest - rated Czech-style Pilsner and our German Ale is the highest rated Kölsch for the third (I think?) year running. I’m no marketing person and not usually one to brag but I think this is the sort of thing that you should share…? It’s a proud moment, for sure.

Introducing our first pale hoppy beer of 2026… US Pale - a truly delicious 4.8% hazy pale with masses of fruity flavour and quenching drinkability.

We're huge fans of Calypso hops and can't understand why they're not seen more often - they bring a big, bold explosion of tropical fruit with a depth of flavour that puts Calypso up there with the very best modern varieties. It's front and centre of this beer with Cashmere and Simcoe adding their tasty bounty to the fruit salad and contributing elements of citrus and pine too.

Malt-wise, a beer like this falls flat with your standard Pale Ale base malt; we know because we've tried it, once. Never again. (Extra Pale) Maris Otter however brings the requisite amount of body and - oomph? that's required to balance out the fruity shenanigans. You can see why this heritage barley variety has stood the test of time, it just makes great beer.

So we have a lovely looking and ludicrously tasty Pale Ale full of bright, juicy tropical fruit - pineapple, passionfruit and grapefruit - plus a zingy citrus-pith edge. With a light coconut-creamy sweetness, balancing, restrained bitterness and clean, crisp easy-drinking sessionability it lands somewhere between a NEIPA and a Westie- is this a 'No Coast?' Doesn't matter. Good beer is good beer.

Two new beers this week, a crisp lager and a silky smooth winter warmer - both ideal for February enjoyment.

Bohemian (4.3%) is our annually-released Czech-style Pilsner brewed late in the year and left in the tanks while we’re all doing Christmas stuff, allowing the yeast plenty of time to do their thing. This long conditioning period makes for a super clean fermentation giving the malted Bohemian Pilsner barley and whole cone Saaz hops all the room they need to really shine. Good malt plus noble hops is a tried and tested winning formula and it certainly makes for an exceptionally drinkable beer.

Over on the dark side is Double Dark Mild (6.2%) which we brewed in collaboration with Harry from Dookit Brewing. We wanted a strong winter ale to launch our new festival, Februa (happening this weekend, see previous post for more info) and as we have a shared love for the Mild style it seemed an obvious choice. Safe to say, it turned out great! Harry provided the initial recipe and we brewed it at STF using cacao husks from Glasgow’s Bare Bones to amplify the chocolate notes in the malt, with Monroe and Bramling Cross hops for big juicy dark fruit flavours too. Cherry and strawberry combine really well with the chocolate and the soft, sweet, velvet smooth mouthfeel of a Mild; it’s exactly the sort of beer I want to be drinking in February.

Both of these can be enjoyed this weekend at Koelschip Yard, Clockwork and The Old Toll Bar as part of the inaugural Februa festival - see you there if you can make it - and they are of course available at all the best independent beer shops and on our website too.

Lennon and McCartney, toast and butter, Homer and Marge; some things are just meant to be together. We’ve been pals with Harry from Dookit for ages and we share similar tastes and values when it comes to brewing so joining forces to make a beer has been long overdue… now, finally, we have! And what a beer it is.

Not only that, we’re launching our Double Dark Mild next weekend (7th Feb) with a pilot version of Februa - a brand new beer festival celebrating ‘Proper Lagers and Winter Ales’. Three of our favourite Glasgow Pubs - Koelschip Yard, Clockwork and The Old Toll - will be serving Double Dark Mild on cask plus a few other STF and Dookit bits and pieces. Collect a stamp when you order a Mild, get your card stamped in all three pubs and we’ll send you a T shirt!

Our Mild is the ideal beer to launch a winter festival with - hearty, rich, and velvet-smooth pint with generous helpings of chocolate and dark fruit flavour. We used cacao husks from another small, independent Glasgow producer, Bare Bones Chocolate, in both the mash tun and the kettle and a grist comprised of nine different grains, along with Monroe and Bramling Cross hops. It’s a true contemporary Mild infused with the character of both breweries, combining the best of modern and traditional approaches to the style.

Cask pints will be flowing at the three venues who’ve kindly agreed to take part in our inaugural event next weekend along with our Bohemian Pilsner and Dookit’s Oyster Stout. The plan is to develop the festival into an annual occasion bringing some of the best winter ales and proper lagers from across the UK to Glasgow. Rest assured we’ll be working with Harry throughout the year to create something a bit special.

It’s a big, festive release week for us with two new beers and a dazzling array of mini kegs and gift packs!

Parkin Porter is based on a traditional Parkin cake recipe - ginger, cinnamon and treacle are front and centre of this 5.0% brown Porter so it’s more or less a Christmas beer…

Also hitting shelves this week is Peated Brown, the beer we first brewed earlier this year for our pals at Croft 3 on Mull. Peat smoked malt wafts through a robust Brown Ale grist with beech smoked malt in the mix too, rounding everything out and ensuring a perfect balance of drinkability and character.

Both feature in our Christmas mixed cases and gift cases, of which there's a wide range including 2, 4, 6, 12 and even 24 packs. And last but not least we have a couple of 5 litre mini kegs to choose from - the aforementioned Peated Brown and our ever popular German Ale.

New beers are in shops and pubs all over the country from today and you’ll find them in our web shop too, along with tons of other good stuff. We deliver nationwide, free of charge locally and for all orders over £50. And if you’d like to collect from the brewery, you can choose to do so on Friday next week when we’ll be offering seasonal samples and whistling merry tunes. Hurray!

Our brand new Bière de Garde is 7.8% and dripping with seasonal goodness in the form of big, fruity esters, sweet malt and French oak. Roaring fire and mature cheese optional, but highly recommended. Winter’s coming… embrace it, enjoy it.

We’ve also added a fresh batch of German Ale, our tasty, smashable Kölsch, back into the range - bags of bready malt flavour here along with subtle notes of cut grass and strawberry. Super tasty, super smashable.

And as if all that wasn’t enough, we’ve given our ever-popular mixed cases a seasonal selection-box boost with a re-stock of some recent favourites. Try finding all of these styles in one box anywhere else, I dare ye!
