Iced Chai with a Saffron-Moonji Vanilla & Black Cardamom Cold Foam 💛

With mood boosting saffron to help bring some internal sunshine on a rainy day!

Ingredients:

For the chai concentrate:
- cup of water
- 2 inches of fresh ginger
- 8 cardamom pods
- pinch of fennel seeds
- 1 tsp cinnamon
- a generous pinch of ground black pepper
- x2 black tea bags
- x2 tsp of maple syrup

For the Moonji cold foam:
- 1 tub of vanilla & black cardamom ice cream
- a generous pinch of saffron threads

Recipe:

For the chai: Grind fresh ginger and cardamom pods in a pestle and mortar. Add to a cup of hot water with cinnamon, fennel seeds, black pepper, and tea bags. Bring to a boil, then leave to cool. Transfer to the fridge to chill.

For the cold foam: Allow your Moonji Vanilla & Black Cardamom ice cream to melt to room temperature. Note: once melted, do not refreeze. Grind a pinch of saffron in a pestle and mortar, then pour a small amount of the warm melted ice cream over it to bloom. Stir back into the rest of the melted ice cream and whisk with an electric whisk until light and foamy.

To assemble: Fill a glass with ice. Pour over your chilled chai. Spoon the saffron cold foam over the top. Serve immediately and enjoy 😍

I started Moonji because I believed ice cream could feel as good as it tastes. Plant-based, Ayurvedic-inspired, and made with ingredients that are rooted in ancient wisdom.

Why did I start a plant-based business?

Before Christmas, I had a call with a potential investor. He asked me something no one had ever asked me before.

“Would you consider making dairy ice creams?”

I’m so glad he did. Because it made me realise, without a shadow of a doubt, that I would never make a dairy ice cream.

And here’s why.

✨ Health

In Ayurveda, the cow is sacred. Dairy was considered one of the most nourishing foods on earth. But that was before industrialisation. Today, the majority of dairy cows are kept in conditions that would be unrecognisable to our ancestors. Hormones, antibiotics, confinement. The product looks the same. But it isn’t.

I believe food should nourish. So I made a decision to build something that could, without compromise.

🌿 The planet

We use oat milk as our base. And we’re proud of that choice.

Oat milk emits 70% less carbon than dairy per litre, and uses more than 90% less water. Choosing plant-based isn’t about perfection. It’s about making better choices where we can. And oats are a pretty beautiful place to start.

💛 Inclusivity

This one is personal. Moonji exists because I wanted to make something everyone could sit down and enjoy together. Dairy-free, gluten-free, refined sugar-free. Not “free from” as a consolation prize. Free from, and still extraordinary.

We are a plant-based business not because it’s a trend. But because it’s the right thing to make.

There are places in the world that feel alive in a way you can’t explain.

Glastonbury is one of them. Known as the heart chakra of the world, there’s a magic in the air that you can almost reach out and touch. The Chalice Well, one of the oldest holy wells in the UK, is a sanctuary where you can be still, go inward, and cast your dreams into the water.
We feel deeply at home here. The spirit of this place and the spirit of Moonji are not so different.

Rooted in something ancient. Made for moments of nourishment and wonder.

In folklore, Cardamom was known as a powerful aphrodisiac, a sacred gift from deities for fertility, and a “seed of angels” used in, love potions, and protection magic 🪄
