Changed my mind about the Cajun Chicken Cottage. Ended up wrapped in a tortilla, topped with cheese, vine tomato and jalapeños. Kept it mild, you can always add heat but, can't take it out......

Busy, busy, busy. Yesterday i used Indian leftovers for our dinner, we tucked into a rather delicious Indian Cottage Pie. Got me thinking.....
Stage one of a new addition, Cajun Chicken Cottage. Chicken currently marinading, and, a whole lot of potatoes to peel and cook.
A welcome break from tiling, building sheds, drilling, sanding, wallpapering...... etc

We all do it don't we? We even ask customers 'Do you like spicy?'
We mean 'How hot is it?'. 'Do you like mild, medium or hot?'. Even that description depends on personal taste.
Photo is a few of my spices, all often used in cakes and desserts, nothing we would describe as 'spicy', spiced maybe but not 'spicy'.

I love chopping and slicing. I love using fresh ingredients and, the whole process is usually relaxing, but, sometimes? I cheat, when it is for 70 people, I use my Ninja to slice onions. But.... move house and 'Where is the plunger thingy?' So.... I hate slicing onions!

Feedback from a new customer after her first meal..
'Wow, I loved the Cottage Pie, looking forward to trying my other meals'...Cottage Pie, every shop will have one. What makes mine different? Simple. Real, fresh ingredients, cooked, cooled, frozen. A portion that doesn't leave you hungry.
Quality, Taste, Value.
Here's the shocker.. I actually peel potatoes to make the mash for the top, nothing rehydrated!
