Chicken Breyani
Serves 4
Ingredients
1 kg chicken
2 med tomatoes grated
2 onions (slivered)
4 medium potatoes
2 tblsp ginger and garlic
3/4 cup plain yogurt
2 tsp masala
2 tsp chilli powder
1 tsp tumeric powder
1 tsp dhania powder
1 tsp jeera powder
Curry leaves if available
1 cup chopped coriander and mint
4 green chillies
Fresh tyme
1 cup lentils if available
2 cups basmati rice
Egg yellow
Butter
Oil
Step 1
Wash and drain chicken.
Puree tomatoes with chillies and coriander. Add spices and ginger and garlic. Add yogurt and mix well. Salt to taste. Cover and refrigerate overnight.
Step 2
Precook basmati rice with elachi and cinnamon sticks. Just a few mins is fine.
Step 3
Boil lentils till soft not mushy. Add about 1/4 cup of these to the precooked rice.
Step 3
Fry onions.
Step 4
Potatoes colour and fry till semi cooked
Step 5
Use some of the hot oil to cook the chicken.
Step 6
When the masala starts to dry up layer as follows:
Potatoes placed between chicken.
Fried onions(keep some for the top)
Lentils
Rice and leftover onions.
Add little blobs of butter over rice.
Cover pot with foil and finish cooking in the oven for 1.5 hours at 180 degress
