Haye Farm Cider Haye Farm Cider is a small family-run business which is probably the oldest maker of traditional cider in the world.

“Cider has been made here on the farm since the thirteenth century using only apples from the farm and neighbouring orchards. They have over 40 different types of apple, some of which are particular to Haye Farm itself. Their cider is of high quality and very traditional, still pressed through straw, using wild yeasts and wooden barrels.”

Haye ho!

Even in early March one of our ancient trees has an impressive crop of red apples. We are happy to leave surplus apples in the orchards as Mother Nature wastes nothing and our very own resident white pheasant, along with many other birds and wildlife, enjoy the apples.

Same tree taken a few hours later when the sun had burnt off the mist. After a particularly wet winter it really was a welcome sight.

Haye ho!

Always a pleasure to see our distinguished white pheasant roaming the orchards.

The orchards themselves, despite the recent wet and wild weather, are still full of apples reflecting the 50+ different varieties including many later varieties. All being well, we will keep pressing until Christmas.

Haye ho!

The extraordinary harvest means we’ve been more preoccupied with pressing the apples rather than the stars of the show, the trees themselves.

Thankfully an inspiring visit from reminded us that sometimes Mother Nature’s most magical moments are right under our noses. In this case, some fern epiphytes on our ancient trees. Not only quite beautiful, but also an indication of extremely clean air and temperate climate.

Haye ho!

Whilst one of the very few remaining traditional cider-makers using straw and building a cheese which has little changed for 800 years, due to this year’s extraordinary Mast harvest, like the farmer who uses a combine to assist the binder, we too have used a slightly more fancy press to help make the most of Mother Nature’s bountiful harvest. 🍎🍏🍎🍏
