The Maddur Vada, crafted accidentally like many great things in the culinary world with improv and a lack of said ingredients at that specific time. Made in 1917 along the Bangalore-Mysore highway by one little known street-side vendor named Ramachandra Budhya popular for his Idlis, pakoras and vadas who turned to this iconic staple when he ran out of certain ingredients and was late for work. The rest is history, and the Maddur Vada became the most popular 'tiffin' snack at railway stations in Karnataka and buses would stop at his joint in Maddur just so they could savour this specialty, taking its name after the place.
