This strawberry yoghurt bowl is fresh, and packed with fresh British Strawberries. Ready in just a few minutes, it's the perfect breakfast.

Ingredients:
4 large strawberries
4–5 tbsp Greek yoghurt
1 tbsp chia seeds
1 tsp honey
1 banana, sliced
Shredded coconut
1 tbsp honey, for drizzling

Method:

1. Add the strawberries to a bowl and mash with a fork until smooth.
2. Stir in the Greek yoghurt, chia seeds, and 1 tsp honey until well combined.
3. Leave the mixture to rest for a few minutes so the chia seeds can thicken.
4. Slice the banana while the mixture is resting.
5. Top with the banana slices and extra fresh strawberries.
6. Finish with a sprinkle of shredded coconut and drizzle over the remaining honey.

2. Blend until completely smooth and creamy.
3. Pour into glasses and serve immediately.

Ingredients:
250g strawberries, hulled and halved
150g raspberries
100ml fresh lemon juice (around 4–5 lemons)
5 tbsp honey (or more, to taste)
½ tsp vanilla extract (optional)
200ml cold water
500ml chilled sparkling water

Method:

1. Add the strawberries, raspberries, lemon juice, honey, vanilla extract, and cold water to a blender.
2. Blend until completely smooth.
3. Pour the mixture through a fine sieve into a large jug or bottle, pressing with the back of a spoon to extract as much liquid as possible. (Skip this step if you don't mind the pulp.)
4. Stir in the chilled sparkling water and mix gently.
5. Serve over ice with extra strawberries, raspberries, or lemon slices if desired.

6. To make ahead: Keep the fruit mixture in the fridge for up to 3 days and only add the sparkling water just before serving to keep it fizzy.

Packed with juicy blueberries and naturally sweetened with ripe bananas and maple syrup, this soft, fruity loaf is perfect for breakfast or a snack.

Ingredients
3 large very ripe bananas, mashed
60ml maple syrup (or sweetener of choice)
80ml melted coconut oil
190g self-raising flour (or gluten-free self-raising flour, if needed)
150g blueberries, plus extra for topping
Handful of white chocolate chips (optional)

Method
1. Preheat the oven to 180°C.
2. In a large bowl, mix together the mashed bananas, maple syrup, coconut oil, and self-raising flour until just combined.
3. Fold through the blueberries.
4. Pour the batter into a lined loaf tin and top with the remaining blueberries and white chocolate chips, if using.
5. Bake for 45–55 minutes, or until a skewer inserted into the centre comes out clean.
6. Leave to cool before slicing and serving.

This breakfast is wonderfully indulgent with fluffy waffles, crisp maple-glazed bacon and sweet berries packed with goodness. The thyme honey adds a delicate herbal note that makes the whole dish feel extra special, balancing the sweet and salty flavours.

Serves: 4

Ingredients:
For the waffles:
200g plain flour
2 tsp baking powder
1 tbsp caster sugar
2 eggs
300ml milk
60g melted butter
For the bacon:
8 rashers streaky bacon
3 tbsp maple syrup
To serve:
200g fresh berries
2 tbsp honey
1 tsp fresh thyme leaves

Method:
1. Heat the oven to 180°C fan / 200°C.
2. Lay the bacon on a lined tray, bake for 10–12 minutes until sticky and crisp. Remove the tray from the oven and brush the bacon with maple syrup and bake for 3 more minutes until crispy.
3. To make the waffle batter, mix the flour, baking powder and sugar in a bowl.
4. Whisk together the eggs, milk and melted butter, then stir into the dry ingredients.
5. Cook the batter in a waffle iron according to the manufacturer’s instructions.
6. Mix the honey with the thyme leaves.
7. Serve the waffles topped with bacon, fresh berries and thyme honey.

Ingredients
200g rolled oats
2 tbsp chia seeds
360ml plant-based milk
245g plant-based yoghurt
225g blueberries (fresh or frozen)
2–3 tbsp maple syrup, to taste
1 tsp vanilla extract (optional)
Pinch of salt
For the chocolate topping:
80–100g dark chocolate
1 tsp coconut oil (optional)

Method
1. Add the rolled oats, chia seeds, plant-based milk, yoghurt, blueberries, maple syrup, vanilla extract, and a pinch of salt to a large bowl or container.
2. Stir well until everything is evenly combined.
3. Divide between containers if meal prepping, or leave in one large container.
4. Melt the dark chocolate with the coconut oil, if using, and pour a thin layer over the top.
5. Refrigerate overnight, or for at least 4 hours, until thickened.
6. Enjoy straight from the fridge once the chocolate has set.
