It's really true what the sayโ€ฆ January always feels like the LONGEST month and then before you know it it's almost April?! Here's a few highlights from March at Pollen + Grace:

1. Our mezze bowl on a VAN!! Feeling famous ๐Ÿคฉ
2. Went to .ldn for our 11th birthday and this is the only pic we took which is a sign of a good night but not great for a round up post ๐Ÿ‘€ 10/10 bread though
3. Sampling at head office e.g. a great test in how quickly we can make 1,000 mini salad samples
4. We all โœจhateโœจ the camera but we had a great time (still dreaming of that citrus salad)
5. Auroa and Ellen factory-ready ๐Ÿ’โ€โ™€๏ธ
6. Sound on for our excited giggles when we found the van whilst driving to Tesco head office
7. PSA always hires Italians for your NPD team (Pollen pasta range 2027 anyone ๐Ÿ๐Ÿ‘€)

This post makes us a bit nervy to post, mostly because we're not big fans of comparison, but some things just need to be talked about. We work HARD to keep our meals as natural as possible, really hard. It makes us 'difficult' ๐Ÿ™ƒ

It goes against everything this industry wants from us - longer shelf life, cheaper prices... which is all way easier to do if you just add a few extra ingredients that you wouldn't at home.

But we make meals that we want to eat - meals that are exactly the same as what we would've made at home if we'd had the time to meal prep. So that means our rice is just rice (and brown rice because โœจ๏ธfibreโœจ๏ธ).

No added sugars, no oil, just rice ๐Ÿ™

We're going to start sharing a few more of these - all comparing our meals to other products currently on the shelves next to ours.

What a morning ๐Ÿฅน The energy outside as over 100 female founders gathered for the big reveal of the window display was something else!! ๐Ÿ™๐Ÿ’›

There was lots of yapping, lots of babies and every conversation overheard was supportive and uplifting. A moment where we felt extra proud to be women and thrilled to be part of this community ๐Ÿฅน Thanks again ๐Ÿ’›

I'm sure you've all heard the stat by now but we won't stop yapping on about it - only 4% of people in the UK eat enough fibre everyday, with most adults coming in about 10g below the recommended 30g ๐Ÿคฏ

Greens, herbs, and plenty of flavour ๐Ÿ’š This Super Green Risotto is proper comfort in a bowl. Creamy, vibrant, and packed with feel-good goodnessโ€ฆ because weโ€™re all about the greens this season.

INGREDIENTS:
Baby spinach, fresh basil, chives, cold water, 1L veg stock, olive oil, 1 onion (finely chopped), 2 garlic cloves (minced), 400g carnaroli rice, salt, pepper, nutritional yeast (to taste).

METHOD:
Blitz spinach, basil, chives and cold water into a smooth green purรฉe. Keep veg stock warm. Sautรฉ the onion in olive oil with a pinch of salt until soft, then add garlic for 1 minute. Stir in rice and cook until slightly translucent. Add stock gradually, stirring until absorbed each time, until the rice is 80% cooked. Pour in the green purรฉe and cook until creamy and fully done. Remove from heat, add nutritional yeast and a drizzle of olive oil, cover for 3 minutes, then season and serve.

Spice up your February ๐ŸŒถ๏ธโœจ Our Gochujang Power Bowl is packed with protein, colour, and flavour to keep you feeling good all day! Gochujang, a tangy, spicy, slightly sweet Korean paste, adds the perfect kick to our roasted butternut squash ๐ŸŽ‰

Recipe below โฌ‡๏ธ

For the Roasted Butternut Squash:
1 medium butternut squash (peeled, deseeded, and cubed), 1 tbsp olive oil, 1 tbsp gochujang, Salt and pepper

For the Power Bowl:
1 cup cooked wild rice, 1 cup edamame beans (cooked), 1 cup fresh spinach (chopped), 1 cup shredded red cabbage, 1 cup bean sprouts, 2 tbsp sesame seeds

For the Spicy Dressing:
1 tbsp gochujang, 1 tbsp soy sauce or tamari (for gluten-free), 1 tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp maple syrup, 1-2 tsp chilli garlic sauce or sriracha

Roast the Butternut Squash:

Preheat oven to 180ยฐC.

In a large bowl, toss squash cubes with olive oil, gochujang, salt, and pepper.

Spread evenly on a baking sheet and roast 25-30 mins, flipping halfway, until tender and lightly caramelised.

Remove and set aside.

Cook the Wild Rice:

Cook according to package instructions, fluff with a fork, and set aside.

Prepare the Bowl Ingredients:

Rinse and dry the spinach and bean sprouts.

Make the Spicy Dressing:

Whisk together gochujang, soy sauce (or tamari), rice vinegar, sesame oil, maple syrup, and chilli garlic sauce (or sriracha).

Add warm water to thin to your desired consistency and whisk until smooth.

Assemble the Power Bowl:

Layer in bowls: wild rice, roasted butternut squash, edamame, spinach, red cabbage, and bean sprouts.

Drizzle with spicy dressing.

Sprinkle sesame seeds on top.
