What are the two most expensive spices in the world?
Saffron and vanilla.
Both come from flowers that bloom for just one or two days a year. Miss that window and the harvest is gone.
Saffron comes from the delicate stigma of the crocus flower, each thread picked carefully by hand. It takes thousands of flowers to produce a small amount. Vanilla is just as demanding. The vanilla orchid must be hand pollinated, flower by flower, in a precise and labour intensive process.
So why is vanilla ice cream so cheap? Because most of the time you are not eating real vanilla.
The main flavour compound in vanilla is called vanillin, and scientists discovered how to synthesise it in a lab. That is why protein shakes and supermarket ice cream can taste like vanilla without containing the real spice. But true vanilla contains hundreds of flavour compounds beyond vanillin, giving it depth, woodiness, warmth and complexity that artificial flavour simply cannot replicate.
Pair real vanilla with saffron and something remarkable happens. The leathery warmth of saffron meets the balsamic, woody richness of vanilla. Together they create a perfumed, decadent mouthful that feels layered and indulgent.
