Applewood-smoked side of salmon, lightly cured with salt for one hour, then hot-smoked over applewood for 35 minutes until the internal temperature reached 60 °C — our first ever attempt at hot smoking. Served with new potatoes, tender asparagus, and a beetroot-and-dill sour cream sauce.

Four gorgeous days in New York for a little belated anniversary escape. Here are a few of our favourite places…

- - this hotel has been on our list for a while and we finally got around to staying. Dripping in historic rock and roll elegance. Stunning interiors and flawless service. They also do an excellent martini!

- - a relaxed, BYOB sushi spot offering a $75 omakase with warm, attentive service and super fresh fish.

- - a traditional New York steakhouse with old school service and charm. They age their steaks in house. One of the highlights of our trip.

- - retro Lower East Side institution serving some of the best smoked fish, bagels, and babka in New York.

- - an Upper West Side institution for smoked fish, no-nonsense service, and great latkes.

- - a no-frills Brooklyn taquería serving the best tacos we’ve ever had, with house-made tortillas.

- - a casual Brooklyn spot serving fiery and fresh Mexican seafood, their aguachile and mezcal cocktails are incredible.

- - classic Brooklyn pizzeria by the slice and open late.

Bittersweet Chocolate Tart
Cocoa–almond crust, dark chocolate filling, and a glossy glaze. We made the Food & Wine recipe by Alain Ducasse, and it turned out beautifully — rich, balanced, and not too sweet.

This paired beautifully with Essensia Orange Muscat dessert wine suggested by our lovely grape expert

Going through a bit of a romesco sauce phase, served here with black rice and buckwheat.

Romesco is made by blending roasted peppers, tomatoes, garlic, toasted almonds, bread, olive oil, vinegar, and smoked paprika into a rich sauce. Smoky, sweet and addictive.

Polpette al sugo con polenta, veal and pork meatballs in tomato sauce with creamy parmesan polenta.

Meatballs:

- 200g veal mince (20% fat)
- 200g pork mince (12% fat)
- 2-3 slices bread, soaked in milk (crusts removed)
- 1 egg
- 3–4 tbsp grated Parmesan
- 2 tbsp parsley, chopped
- Grated nutmeg
- 3 garlic cloves, grated
- Salt & pepper
