The Whisky Exchange currently stocks more than 2,500 whiskies, of which about 1,900 are Single Malt Scotch whiskies, with 200 Bourbons available and the remainder being made up of Blended Scotch, Grain, Irish, Japanese and other whiskies from countries including Wales, South Africa, India, Sweden and Australia. In addition to this there are more than 275 rums, around 200 vodkas, more than 300 Cogn

acs and Armagnacs, 100 gins, 120 Tequilas and more than 400 specialist liqueurs. In all, something in the region of 5,000 products are active on the site and available to order online at any given time, and this number is increasing as we continue to stock the best of the thousands of new products released each year.

It is all too easy to develop entrenched views around spirits. These are for sipping, those are for mixing, and never the twaine shall meet. And that is evidently hokum.

Cognac is a fine example. There are expressions which we probably wouldn't mix, (i.e. anything from before 1900) but VSOPs, VS and even some XOs can be brought to life with a little splash of mixer as was shown at Cognac Show. In Cognac itself they aren't afraid of a cognac et tonic, over here in the UK we might be more used to some ginger ale, but even soda water can make a delicious long drink.

Trinidad is home to some of the most famous names in rum. Angostura, and its legendary bitters, and Caroni, with its intense, funky style, are distilleries that we love. For a period of a decade, from 2005 the island was also home to a smaller-scale, more artisanal distillery: Ten Cane.

In a dramatic departure from the island's usual style of molasses based rum, the majority of the base here was fresh sugar cane juice. Using a specialist yeast strain and a five-day-long ferment the goal had been to build in flavour from the very start.

Unlike in the Rhum Agricole tradition, a pot still was then used for double distillation before this specific rum was filled into an ex-cognac cask. The story doesn't end there, after 4 years in the tropics it was shipped to England where it was re-racked into an ex-rum cask for another 5 years, and then it crossed the Atlantic again for a further 3 years aging in New York state.

Rum Trail 🥃

Sukhinder Singh is a force, no other word for it, in the spirits industry. When he decides that something is worth bottling, it's worth while paying attention.

He has a long standing interest in rum with Black Tot, more recently he has been drawn to source and to bottle rums from around the world himself. In his own words, “there are two approaches we have – but they start at the same place... we buy liquid that tastes great. That is either a spirit that has the quality to be bottled immediately as is, or, more often, has the right elements where we can see a way to enhance it further.”

It takes around 7 long years for a blue weber agave to come to maturity. In that time the slow dance of weather and climate, soil and aspect, and the specifics of site and selection, all affect how the agave develops.

On the whole, producers are working on such a scale that they need to source agave and agave distillate from a whole range of different places. However some, like Ocho, are able to oversee every step of the process and can in turn reveal and chart the different delicious characters of their plots.

First tasted at Rum Show, this 25-year-old Bajan rum is nothing short of a landmark. It is easy, and frankly far too common, to use superlatives around some spirits. In this case they are well deserved. This is a rum that has survived and thrived more than two decades in a tropical climate. Other distillates would yield and become impossibly woody. This expression from Mount Gay has achieved a magisterial maturity but that still has at its core the distillery's signature clean fruit and toffee.
