INGREDIENTS
DOUGH
- 500g strong bread flour
- 7g instant yeast
- 60g Natvia Synbiotic Sweetener
- 1 tsp salt
- 3 eggs
- 180ml warm milk
- 100g soft butter
- 1 tsp vanilla extract
FILLING
- 100g ground almonds
- 50g butter
- 40g Natvia Synbiotic Sweetener
- 1 egg
- Β½ tsp almond extract
- 4 to 5 apricots, diced
TO FINISH
- 1 egg, beaten, for egg wash
- Flaked almonds, to sprinkle

METHOD
1. Mix the dough ingredients except the butter and knead until smooth. Gradually add the soft butter and knead for 10 minutes until silky. Cover and leave to rise until doubled in size.
2. Mix the almond filling ingredients together until smooth, and dice the apricots.
3. Divide the dough into 10 portions. Flatten each one, add a spoonful of almond mixture and a few apricot pieces to the middle, then seal the dough around the filling and shape into a bun.
4. Place on a lined baking tray, cover and leave to rise for 45 minutes.
5. Brush with egg wash, sprinkle with flaked almonds and bake at 180Β°C for 18 to 22 minutes until golden. Enjoy warm.

INGREDIENTS
SPONGE
- 150g gluten-free flour
- 80g Natvia Synbiotic Sweetener
- 1 tsp baking powder
- 2 tbsp oil
- 200ml milk of choice
- Zest of 1 lemon
- 4 tsp sugar-free lemon curd
TOPPING
- 100g natural or coconut yoghurt
- Dash of lemon juice
- 2 tbsp Natvia Synbiotic Sweetener
- Freeze-dried strawberries and granola, to sprinkle

METHOD
1. Mix together the sponge ingredients in a large bowl until smooth and quite thick.
2. Grease 4 individual pudding tins. Spoon half the mixture into each one, then add a teaspoon of lemon curd in the middle. Spoon over the remaining mixture to reach the top of the tins.
3. Bake at 180Β°C for 15 to 20 minutes until risen and firm. Allow to cool, then turn upside down onto a wire rack.
4. Mix together the yoghurt, lemon juice and Natvia Synbiotic Sweetener, then spoon over each pudding to generously cover. Sprinkle over the granola and freeze-dried strawberries to serve.

Most people are only getting 20 to 25g of fibre a day, well under the 30g (men) and 25g (women) recommended by Better Health Channel.
