Ingredient spotlight: star anise ⭐

One of the signature flavours in the famous spice blend, Chinese Five Spice, star anise is a unique spice commonly used in Asian cuisines. Harvested from a small evergreen tree that grows mostly in southern China and southeast Asia, star anise are picked and dried before they're fully ripe, causing them to harden, resembling small wooden stars.

Star anise has a pungent, distinct, licorice-like flavour that is ever so slightly bitter, with a hint of sweetness. Experience the unique aromas of star anise in this week’s Vegan Laksa. Native to the Peranakan cuisine, this dish is a bowl of heaven for curry lovers. Want to give your tofu extra crispiness? Upgrade your tofu game in minutes by following our quick and easy steps below! 🍜 🔪

1. First, pat your tofu with a cloth or kitchen roll to remove the excess moisture from the block
2. Slice your dried tofu into cubes
3. Next, in a bowl mix cornflour with salt, pepper and your seasonings
4. Add your tofu cubes, ensuring you cover all your tofu entirely in the cornflour seasoning
5. Finally, cook your tofu in a hot pan with a healthy glug oil for 2 minutes on each side
