This crispy rice salad brings together layers of flavour that just work. Crispy, fresh, savoury, spicy - with Lee K*m Kee doing what it does best. ๐ฅ
Ingredients:
350g cooked basmati rice (cooled)
20ml neutral oil
20ml Lee K*m Kee Premium Light Soy Sauce
1 cucumber, sliced
1 avocado, diced
100g edamame
10 radishes, sliced
200g tenderstem broccoli (blanched or lightly stir-fried)
2 spring onions, sliced
Handful of mint & coriander
50g toasted peanuts, roughly chopped
Dressing:
10ml Lee K*m Kee Pure Sesame Oil
15ml oil
20ml Lee K*m Kee Premium Light Soy Sauce (adjust to taste)
10ml maple syrup
15ml Lee K*m Kee Seasoned Rice Vinegar
Toss the cooked rice with neutral oil and Lee K*m Kee Premium Light Soy Sauce. Spread onto a tray and cook until golden and crispy.
Add the crispy rice to a large bowl.
Top with cucumber, avocado, edamame, radishes, broccoli, spring onions, fresh herbs and peanuts.
Pour in the dressing ingredients: Lee K*m Kee Pure Sesame Oil, oil, Lee K*m Kee Premium Light Soy Sauce, maple syrup and Lee K*m Kee Seasoned Rice Vinegar.
Toss everything together until well combined.
