Zane Metcalf-Cuenca has a been a total legend at dtd. talented, affable, creative, hard working and cultured is a handy combo in a sous chef. It’s of no surprise to anyone that Forza W**e want him as head chef in camberwell.

raspberry danish, peruvian-style. from our lovely cas (who, fun fact, joined dtd on the bar team and, to our delight, revealed her baking talents. we stan a multitalented icon)

based on cas’ favourite desert from her childhood in peru - this is an ode to the suspiro limena. condensed milk & cinnamon custard, raspberry jam, meringue with port, fresh raspberries.
