Who says breakfast has to be boring? 😄
I threw together sardines, eggs and some frozen mixed vegetables and it turned out so good!

Somewhere in the middle of cooking, I remembered this… frozen vegetables are harvested at peak ripeness and frozen immediately, which helps preserve nutrients. Meanwhile, fresh vegetables can lose some nutrients during transportation.

So this meal is quick, budget-friendly and actually very nutritious 👍

Ingredients:

Egusi -----------------------------------4cups
Palm oil--------------------------------30cl
Salt --------------------------------------1tsp
Onions ---------------------------------2bulbs
Pepper ---------------------------------5bells
Crayfish -------------------------------2tbs
Stock cubes ------------------------4cubes
Goat meat ---------------------------1kg
Goat meat spice -----------------5g
Dry fish -------------------------------as preferred
Oha leaves --------------------------3handfulls
Uzuza leaves -----------------------½handfull

Oha and uzuza leaves can be substituted with other vegetables such as Ugu (fluted pumpkin leaves), spinach or kale.

You can eat egusi soup with eba, wheat meal, fufu, pounded yam, poundo potato and the list goes on and on... Including eating the soup alone with spoon 😉
