Hi Everyone I hope you’re all well & enjoying these gorgeous spring days 🌻

I thought I’d just share this little recipe with you because it’s one that really fills that craving for eggs and, well, as you well know by now that’s what I’m all about 🥰

Made with Firm Tofu, this ‘tofu omelette’, I guess, is the most amazing discovery and I’m so grateful to Vegan Punks for sharing it 🙌
It’s an absolute game-changer 👌💡
It has an unbelievable egg-like texture; it has the lightest airy wobble to it 😄 it even has that lovely chewy layer on the bottom of it like you get with a fried egg.

I made a few changes to it though because well, that’s just what I’m like 😉and you can do the same for your tastes…

Lmk if you’re interested in the recipe & I’ll post it here as soon as I edit the videos I made a few days ago for my sister…
