Inspired by street vendors at Japanese festivals, we love serving Amazake (甘酒) at our gatherings.
We make a fresh batch in our kitchen using just water, rice, and koji—the fermented culture behind miso and sake. The fermentation breaks down the rice starches into a naturally sweet non-alcoholic drink packed with probiotics and vitamins. In Japan they affectionately call it a "drinking IV drip" (飲む点滴)!
We enjoy hearing from our guests about similar traditional drinks from their cultures, like Turkish Boza and Nigerian Kunu. We're excited to discover more at our next gatherings.

水・お米・麹だけで仕込んだ、自然な甘みを楽しめるアルコール不使用のドリンクです。
ゲストの皆さんからは、トルコの「Boza」やナイジェリアの「Kunu」など、それぞれの国に根付く伝統的な発酵飲料のお話も聞かせてもらいました。
国は違えど、食文化にはどこか通じるものがある。
そんな発見が、とても興味深い時間でした。
