I’ve been obsessed with the idea of a Lemon & Elderflower cake since I
first read about Harry & Meghan’s wedding cake. Since I didn’t have
lemons today, I swapped them for limes—and honestly, the “punchy”
citrus profile paired with the floral elderflower is an absolute
game-changer!

This version is completely egg-free and uses a little kitchen science:
the lime juice reacts with the baking soda to give us that perfect,
airy rise. I also use a mix of butter (for flavor) and oil (for that
“moist for days” texture).

London is absolutely scorching today, so I’m bringing you TWO ways to cool down. ☀️🍋

Drink 1: The Creamy Caramel Twist 🥛 I wanted to make Brazilian lemonade but had no condensed milk, so I used a tin of Carnation Caramel instead. Blended whole limes, caramel, milk, and ice. It’s creamy, zesty, and surprisingly incredible.

Drink 2: The Ultimate Sparkling Citrus 🫧 For this one, patience is key. I let lemon and lime zests sit in sugar and water for several hours to extract all those intense essential oils. Strained it, added fresh juice, and topped it with sparkling water over ice.
