Traditional Irish Colcannon Recipe 🥔🥬
Ingredients:
For the Potatoes:
• 2 lbs (900g) russet or Yukon gold potatoes, peeled and cut into chunks
• 1 tsp salt (for boiling water)
For the Colcannon:
• 3 cups green cabbage or kale, finely shredded
• 1 cup low-fat milk (or whole milk for creamier texture)
• 4 tbsp butter, divided
• 3-4 green onions (scallions), thinly sliced
• Salt and black pepper to taste
• Optional: 2 cloves garlic, minced
• Fresh parsley for garnish
Instructions:
Step 1: Prepare the Potatoes
• Place potato chunks in a large pot and cover with cold water
• Add 1 tsp salt
• Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender
• Drain well and return to pot
Step 2: Cook the Greens
• While potatoes cook, melt 2 tbsp butter in a large skillet over medium heat
• Add green onions and cook for 2 minutes until softened
• Add cabbage or kale and cook for 5-7 minutes until tender
• If using garlic, add it in the last minute
• Season with salt and pepper, set aside
Step 3: Heat the Milk
• In a small saucepan, warm the milk with remaining 2 tbsp butter
• Heat until butter melts (don't boil)
Step 4: Mash Everything Together
• Mash the drained potatoes until smooth
• Gradually add the warm milk mixture while mashing
• Fold in the cooked cabbage/kale mixture
• Mix until well combined but still slightly chunky
• Taste and adjust seasoning
Step 5: Serve
• Transfer to a serving bowl
• Make a well in the center and add an extra pat of butter if desired
• Garnish with fresh parsley
• Serve hot!
